Fantastic corporate event completed this week in sunny Darlington. The Smoke Shack popped in, popped up and delivered some of the best smoked meat we have cooked to date at a two day open-day for a Darlington based company.
We served 5 beef briskets, 13 pork shoulder and over 100 sausages along with coleslaw, Mexican street corn and pickles.
This was one of the more difficult smokes we have completed due to the cold temperature, wind and rain. Bringing old Betty (Smoker) to site to smoke the meat added to the atmosphere, allowed people to ask questions and see our 18hr low and slow smoking process in action.
The feedback we received was fantastic and humbling, hopefully we now have few more Texas BBQ fans in the North.
