What actually is Vermouth?

Vermouth is a fortified wine that has been infused with botanicals such as herbs, spices and roots. It begins as wine, is strengthened with a little spirit, then aromatised to create its distinctive character.
Styles range from sweet, often deeper and more spiced, through to dry and extra dry, which are lighter, more herbal and refreshingly crisp.
Traditionally served as an aperitif, it works beautifully over ice with a twist of citrus, with soda or tonic, or as the backbone of classic cocktails. It is also increasingly enjoyed on its own before dinner.
