What actually is Vermouth?

This week, Gio explains what sits behind the label.

Vermouth is a fortified wine that has been infused with botanicals such as herbs, spices and roots. It begins as wine, is strengthened with a little spirit, then aromatised to create its distinctive character.

Styles range from sweet, often deeper and more spiced, through to dry and extra dry, which are lighter, more herbal and refreshingly crisp.

Traditionally served as an aperitif, it works beautifully over ice with a twist of citrus, with soda or tonic, or as the backbone of classic cocktails. It is also increasingly enjoyed on its own before dinner.

This week Evertons are highlighting Saint Pierre Tradition 2024, a classic Côtes de Provence rosé that captures everything people look for in a crisp, elegant southern French style.

If you’re looking for a fresh, dry rosé that feels effortless and food friendly, this is the type of bottle that works across seasons.

Winery of the Month 🍷

This month we’re shining a light on Petit Vega, a personal project from one of Spain’s most respected winemakers, Isaac Fernández Montaño.

Based in the heart of Ribera del Duero, Petit Vega focuses on precision, altitude and purity of fruit. The vineyards sit at nearly 900 metres above sea level on limestone rich soils, conditions that help produce Tempranillo with structure, freshness and depth.

Made from 100% Tempranillo, locally known as Tinta del País, these wines reflect both regional character and careful craftsmanship.

Isaac Fernández Montaño has previously worked with prestigious estates such as Mauro and Valderiz, and brings that experience into this more personal expression of Ribera del Duero.

This weekend Gio’s pick is Valpolicella Ripasso Aristocratico, another of his firm favourites and a brilliant example of depth and value in one bottle.

If you’re looking for a red with richness and character, this is the type of wine that delivers bold flavour without losing balance.

Expect jammy blackcurrant fruit at the forefront, followed by layers of liquorice, cinnamon and dark chocolate. There is a gentle hint of sweetness on the finish, which adds roundness rather than sugariness. Higher in alcohol and fuller in style, it has the weight to stand up to hearty food.

Wine Wisdom Wednesday 🍷

Riesling explained in under 60 seconds.

This week, Gio breaks down one of the most misunderstood grapes on the shelf.

Riesling can be dry or sweet. That’s the key. Many people assume it always means sweetness, but in reality it ranges from bone dry and crisp to lusciously sweet.

Dry styles are fresh, zesty and mineral with notes of lime, green apple and blossom. Sweeter expressions show more stone fruit, honey and floral character, always balanced by bright acidity.

It is one of the most food friendly wines you can buy. Dry Riesling pairs beautifully with seafood and lighter dishes. Off dry and sweeter styles are particularly good with spicy and Asian foods, where that touch of sweetness cools the heat and enhances flavour.

If you have avoided Riesling in the past, it might be time to revisit it. The style you choose makes all the difference.
