Facts about hogget:
- aged between lamb and mutton at 1 - 2 years old. They are slowly finished and matured for longer than lamb, resulting in a larger quantity of more flavoursome meat which is darker and very tender.
- health benefits to the consumer include high levels of omega 3 fatty acids as well as being high in anti oxidants and a good source of zinc, iron, selenium and vitamin B12.
- can be cooked in the same way as lamb or at a lower temperature and more slowly like mutton.
- versatile with a real depth of flavour and pairs well with classic English herbs, Brassicas and mushrooms.
- championed by chefs including Tommy Banks, twice winner of BBC’ Great British Menu and head chef at the Michelin starred Black Swan in Oldstead. According to Trip Advisor this is the Best Restaurant in the World!
The meat from my extensively and ethically reared, pasture fed sheep has higher vitamin and mineral levels than meat from their intensively reared, grain fed counterparts - and the taste is exceptional!
