🐚 CUSTOMER CREATIONS: Bringing whelks into the 21st century!

From Lee Cooper and we are absolutely here for it! 😍

Whelks are one of the most underrated shellfish out there, sustainably sourced, incredibly flavourful and so versatile. And Lee has shown exactly what's possible when you treat them with a bit of creativity and confidence!

Served here in a miso and lemongrass broth with a Thai herb butter finish... move over prawns, whelks are having a moment! 👏

🐚 FANCY GIVING WHELKS A GO? HERE'S HOW:
1. Make your broth — miso paste, lemongrass, ginger and water. Bring to a gentle simmer.
2. Poach your whelks in the broth for 8-10 mins until tender.
3. Deshell and pat dry.
4. Melt butter in a pan, add your Thai herbs, coriander, Thai basil, a little chilli and toss the whelks through until lightly golden and fragrant.
5. Serve immediately with crusty bread alongside.
