Rita Miles has gone absolutely classic and delivered it perfectly — Dover sole with capers and crushed new potatoes.

Dover sole is the king of the flat fish and demands to be treated with respect — and Rita has done exactly that. Simple, elegant and utterly timeless.

That is a seriously accomplished plate of food Rita! 👏

🐟 CUSTOMER CREATIONS...

Chris is back and delivering once again — sea bream with red curry, pak choi and toasted cashews, dressed with herb oil. 🌿

That is a seriously bold and beautiful combination. The delicate sweetness of the sea bream carrying those warming red curry flavours, the crunch of the toasted cashews and that gorgeous herb oil finish...

Chris you absolute legend. Restaurant quality doesn't even cover it!

🌶️ FANCY RECREATING IT? HERE'S HOW:
1. Make your curry base — fry red curry paste in a little oil until fragrant, then add coconut milk and simmer for 5 mins.
2. Season your sea bream fillets well and pan fry skin side down in a hot pan for 3-4 mins until the skin is crispy and golden.
4. Flip and finish for just 1 min on the flesh side — don't overcook it!
5. Wilt your pak choi in the curry sauce for the last 2 mins.
6. Toast your cashews in a dry pan until golden and fragrant.
7. Plate up — curry sauce and pak choi first, bream on top, cashews scattered over and finish with a drizzle of herb oil.
