Manchester, we're coming to see you! The Wh**ky Lounge, organisers of brilliant wh**ky festivals countrywide, are hosting one in Manchester this weekend. And it's in the cathedral no less, it's going to be an incredible place to wander around, discovering whiskies from all over the world. And whiskies from an hour away, over the other side of the Pennines.

We've got a masterclass on Saturday evening too and right now we're digging around in Ben's boxes of cask samples to see which weird and wonderful things we can bring with us. You can grab a ticket at thewh**kylounge.com

For a few years now we've been working on a project with the Banks brothers, to create something special to celebrate the 20th anniversary of their Michelin-starred restaurant, The Black Swan, Oldstead.

We've been working with them since 2018, distilling various incredible plants from their estate for them to use in the restaurant's bar and kitchen. But a fennel-pollen distillate didn't seem like quite the thing for a 20th anniversary. This called for a wh**ky.

Our very first single cask ex-bourbon release, in fact. Bottled at cask strength (58.7% abv) and limited to just 102 bottles. It is a truly delicious wh**ky; toasted coconut, vanilla pod, rhubarb and dried orange on the nose, with a richly textured palate of fruit cake, malt, almond and beeswax. And a lingering, rich finish of toffee and toasted granary bread.

Back in August we had a delivery of 150 litres of the finest pressed apple juice that Yorkshire has to offer, from Jon and Jane at Yorkshire Wolds Apple Juice Co. We resisted the urge to drink it all on the spot (it is unbelievable stuff) and instead set to work making this year's batch of Spiced Apple Martini.

Cooper King Dry Gin, fresh pressed Yorkshire apple juice, some warming spices and you've got the perfect ready-to-pour cocktail. Each bottle contains 5 servings (depending on how good you are at sharing) and you can serve it chilled or gently warmed.

It's a big Christmas favourite but honestly, who can wait that long?

We've been disgorging these beauties, ready for our next Cask Series release in a couple of weeks. There's a big clue on the cask heads for those who like to have a guess at what this bottling is all about...

We all sat down with samples of two alternative 'recipes' for the release, and picked the winner. There was a lot of oooohing and aaaahhhhing and noses stuffed in glasses, but the one that won out in the end was chosen because its deep, savoury, rich flavour and texture just seemed to go perfectly with this time of year. It's a very 'Cooper King' wh**ky, if that makes sense. And we can't wait for you to try it.

It's Friday evening and the sun's gone down - get yourself to your local pub, nab the comfy seats or prop up the bar with your friends. Talk rubbish and drink delicious locally produced drinks. Split a bag of crisps down the middle.

Much excitement this afternoon at Cooper King headquarters, with the maiden voyage of Chris's new filtration board.

Previously when we've been disgorging (emptying) casks ready to be bottled, the distillery gets turned into a spider's web of curling pipes and noisy pumps and vessels and casks everywhere. But earlier on in the summer, Chris decided it was time for a DIY project and managed to cover every single picnic table outside with tools and bags of nuts and bolts.

And here are the fruits of his labour, we were sceptical but it's actually brilliant! All the pumps, pressure gauges and the various filters, all on one board, that hangs neatly on the side of the vessel we're emptying into. Very swish. Very satisfying.

As to what we've been disgorging this morning, you'll only have to wait a couple more weeks to find out...

The news about English Wh**ky gaining its Geographic Indication this week led us back to the English Wh**ky Map that we published earlier in the year. It is absolutely incredible to see how far our flourishing category has come in just twenty years.

For over a hundred years there was no wh**ky distillation in England at all and most would have assumed that it was dead and gone forever. But in 2003 a c***r maker in Cornwall laid down a cask of wh**ky, and then in 2006, a farmer in Norfolk decided to build a whole wh**ky distillery, and suddenly we were off again! Since then, 68 further distilleries have opened and hundreds of thousands of casks have been filled and laid down.

We now have whiskies of all different grain varieties, single malts, blends, whiskies that are hugely traditional and whiskies that are wildly innovative. World's best award winners, age statements and blind-tasting champions.

The new GI should protect the incredible reputation that we're building and make sure that English Wh**ky stays synonymous with quality. We've got several on our bar here at the distillery, so pop in for a drink on a Saturday if you'd like to explore some more, are there any that you've particularly enjoyed?

After months of waiting, we found out this week that English Wh**ky has officially been granted its GI (Geographical Indication). It's a legal protection granted by the Department for Environment, Food and Rural Affairs (DEFRA) that says that if you want to call something English Wh**ky (or wh***ey, producers are free to choose which they want to use) then your product must meet certain criteria.

It's the same concept that protects Ch*****ne in France, Parmigiano Reggiano in Italy and Tequila in Mexico, amongst hundreds of others. It prevents cheap imitations being able to pass themselves off as the real thing, and hopefully maintains a high standard of production within England, which will protect the reputation of our developing category.

It's something the English Wh**ky Guild have been working on for 6 years, and it's faced some noisy opposition from the powers that be north of the border, who perhaps didn't want attention drawn to the fact that the barley used in their version can be sourced from anywhere in the world... whereas English wh**ky will have to use barley grown in the UK, to support British farming.

English Wh**ky is absolutely flourishing at the moment - the quality of the whiskies out there is incredible. There are so many independent producers making delicious stuff that honours tradition AND pushes innovation. The distilleries (all 69 of them at last count!) range from the tiny to the enormous, making a real range of different whiskies. Here's to the next chapter for English wh**ky!
