On Tuesday night we had a gaggle of friends over to the distillery for a tasting evening like no other.
Dean Jackson, eminent Tasmanian distiller and one of the people that taught Chris and Abbie back in 2014, presented whiskies from Waubs Harbour Whisky distillery in Tasmania. Rye Sweeney, Australian whisky expert, brought some bottles from Hellyers Road Distillery. We also cracked open Chris and Abbie's bottle (one of only 24 ever made...) of the Redlands/Lark Distillery collaboration bottling, which they'd bought over there and saved for a special occasion. And that occasion was Tuesday! And to round it off, we also tasted our own Port-Bound, and the port that had previously been in the casks, just for good measure.
Oh, and we started with new-make martinis. As you do.
Turns out that there's nothing better than a room full of people all passionately into delicious whisky, plus good food and a cute dog.
And just to cram some more into the evening, we finished off by all helping to fill the 20L cask that Kristy Lark had brought over with her last week from Tasmania. This is a special one: 10L of Cooper King new-make spirit, mixed with 10L of new-make spirit, casked and matured here. The mirror-image of the 20L Cooper King ex-whisky and rum cask that she took back with her (cheers Border Force Australia!), which is also filled with the blend of new makes, and will be disgorged on the same day, in about 3 years' time. Two sibling whiskies, from opposite sides of the world! Madness.
