🌿Why less is more: the secret of spring green operations

Right now, in spring, the vines are bursting with energy, pushing out new green shoots everywhere. It looks beautiful, but there’s a catch: too many shoots mean the vine wastes its power.

That’s why we step in early. Here is why spring is the crucial time for this:

• Quality over quantity: by removing unwanted or “blind” shoots early, we make sure the vine doesn’t waste resources. We direct 100% of its energy only to the best, strongest branches that will actually bear fruit.

• Giving the grapes some air: fewer shoots mean better airflow and more sunlight later in the season. This keeps the grapes healthy, happy, and safe from diseases.

• The secret to the perfect glass: fewer grapes on the vine mean more flavor, richness, and concentration in every single berry.

Our Shavkapito Reserve 2024 feels just right for both sunny and overcast spring days. Whether enjoyed outdoors in the warmth or indoors on a quieter afternoon, it brings the same sense of balance, depth, and comfort.

Made from 100% Shavkapito grown in Shida Kartli, the wine was fermented on full skins in traditional qvevri and then aged in second-use oak barrels. It shows rich notes of blackcurrant, blackberry, and plum, layered with hints of spice, cocoa, and light oak, with a structured palate, smooth tannins, and a long, refined finish.

Warm spring days are the perfect time to enjoy our Budeshuri Carbonic 2024. Fresh, expressive, and full of energy, this wine reflects a lighter, more playful side of Budeshuri, while still staying true to its character.

Made using carbonic maceration in qvevri, the wine spent one year on whole grape clusters, developing its distinctive aromatic profile. In the glass, it shows notes of cherry, plum, banana, marmalade, elderberry, and a touch of licorice, with a vibrant and juicy structure that makes it especially enjoyable in the warmer season.

We are happy to share that we have completed winter pruning in our Disveli vineyard!

In total, we worked across 22 hectares, including both our four-year-old and two-year-old vines of Budeshuri, Shavkapito, Kisi, Rkatsiteli, Saperavi, Goruli Mtsvane, Tetra, and Chinuri. We also carefully pruned our youngest vines, the one-year-old plantings of Aleksandrouli, Mujuretuli, Shavkapito, Goruli Mtsvane, Meskhuri Mtsvane, and Riesling.

Now we move into spring. The next stage will be the start of sap flow, followed by budbreak and the first leaves. The vineyard slowly comes back to life, and each week brings visible changes.

Egg white fining

Fining with egg whites is a traditional method used in winemaking to gently clarify and refine red wines. It has been practiced for centuries, particularly for wines that have spent time aging in barrels.

Egg whites naturally bind with small tannin particles and other compounds that can cause haze or a slightly rough texture. As they settle to the bottom of the vessel, they help clarify the wine and soften its structure, making the tannins smoother and the overall taste more balanced. The process is very delicate and preserves the character of the wine while giving it a more polished texture before bottling.

At Disveli Estate, we sometimes use this method for wines that have aged in oak. For example, for our Shavkapito that spent three months on 100% skins in qvevri and then more than a year in previously used French oak barrels. Before bottling, we performed egg white fining on four barrels to help refine the wine and prepare it for its next stage in the bottle.

We are happy to introduce another wine from our 2024 vintage line - 3 Angels.

3 Angels is a blend of three white grape varieties: Kisi 70%, Khikhvi 20%, and Meskhuri Mtsvane 10%. This wine reflects the creative approach and openness to experimentation at Disveli Estate.

All three grapes spent one month in above-ground qvevri on 100% skins. After that, 60% of the wine was transferred to French oak barrels. The remaining part stayed in qvevri and continued maceration on 30% of the skins for six months. Once those six months were complete, the skins were removed, and the wine remained in qvevri for four more months without skins. Finally, the two parts, the barrel-aged wine and the qvevri-aged wine, were blended together.

The wine shows an expressive aroma of citrus peel, dried apricot, and juniper, complemented by notes of white flowers and honey. Highly gastronomic, it pairs beautifully with aged cheeses, herb-seasoned white meats, and roasted vegetables.
