EXPLORING THE POTENTIAL OF CONCRETE
This year, we expanded our cellar with concrete tanks from Nomblot.
Our decision to work with concrete was shaped by our experience, which suggests that slow, gentle oxygen exchange can work particularly well with the grape varieties we cultivate.
The natural porosity of concrete allows for gradual micro-oxygenation during fermentation and aging, while its thermal inertia helps maintain a stable environment. Unlike oak, concrete does not impart its own aromas or flavors, allowing us to preserve the purity and varietal character of the fruit.
We chose Nomblot, a French specialist in concrete wine vessels whose history dates back to 1922. The company combines traditional craftsmanship with continued innovation in concrete winemaking. Its vessels are made as a single piece from natural concrete, without chemical additives. The material provides excellent thermal inertia and allows for gentle micro-oxygenation, while the ovoid shape promotes natural movement within the wine, helping to keep the lees in suspension.
For the 2026 harvest, we plan to use eight Nomblot concrete vessels: four ovoid tanks for white grapes and four cubic tanks for red grapes. All of them are equipped with temperature-control systems, giving us precise control over fermentation and aging.
Two eggs will be dedicated to Chardonnay and two to Mtsvane. The grapes will undergo fermentation and aging on the lees in concrete. After fermentation, the wines from two vessels of each variety will be combined and continue aging in a single egg for an extended period of six months or longer.
Two cubic tanks will be used for Merlot and two for Saperavi. For these wines, we will experiment for the first time with fermentation using whole, uncrushed berries.
Our aim is to produce balanced, complex wines and to explore how this particular environment can contribute to the character and expression of each variety.
The 2026 harvest will be our first opportunity to see what Nomblot concrete can bring to our wines. Weâll know the results in time.
