Fried fish is such an important staple in Ghanaian dishes. Popular sides for fried fish in Ghana are kenkey, banku and waakye. Here’s how I make mine:
*I fried 4 pieces of fish at a time and used an 8-inch nonstick frying pan.
1 &1/2 teaspoons sea salt
16 pieces of fish parts (not boneless or skinless), scales removed
1&1/2 cups vegetable oil (add more if you’re using a bigger frying pan)
1. Season the fish with salt and fry in hot oil in a frying pan on high heat.
2. Just flip the fish when it looks crispy and light brown on both sides. It took me about 15 minutes to fry one side and 10 minutes on the other side.
