Τρύγος στο Domaine Chandon de Briailles !

Ελάχιστα μακριά από τον μαγευτικό λόφο του Corton, στο Savigny-lès-Beaune, βρίσκεται το ιστορικό Domaine Chandon de Briailles , στα χέρια της ίδιας οικογένειας από το 1834.

Σήμερα, η Claude και ο François de Nicolay καλλιεργούν βιοδυναμικά, από το 2005, αμπελώνες στα Aloxe-Corton, Pernand-Vergelesses και Savigny-lès-Beaune, ανάμεσά τους και σημαντικά Grand Cru και Premier Cru terroirs.

Ο τρύγος γίνεται χειρωνακτικά και η οινοποίηση ακολουθεί μια μη παρεμβατική φιλοσοφία, με αυθόρμητες ζυμώσεις και ελάχιστες προσθήκες. Στα Pinot Noir, η χρήση ολόκληρων τσαμπιών προσαρμόζεται στη χρονιά και μπορεί να φτάσει ακόμη και το 100%.

Στα ιστορικά κελάρια του 13ου αιώνα, τα κρασιά εξελίσσονται αργά, αποτυπώνοντας την καθαρότητα και τον χαρακτήρα κάθε terroir.

Just a short distance from the enchanting hill of Corton, in Savigny-lès-Beaune, lies the historic Domaine Chandon de Briailles , in the hands of the same family since 1834.

Today, Claude and François de Nicolay have been farming their vineyards biodynamically since 2005, across Aloxe-Corton, Pernand-Vergelesses and Savigny-lès-Beaune, including outstanding Grand Cru and Premier Cru terroirs.

Harvest is carried out by hand, while the w**emaking follows a non-interventionist philosophy, with spontaneous fermentations and minimal additions. For the Pinot Noir, whole bunches are used according to the character and maturity of each vintage, reaching up to 100% in exceptional years.

In the domaine’s historic 13th-century cellars, the w**es are given time to evolve slowly, preserving the purity and character of each terroir.

Ο τρύγος είναι κάτι πολύ περισσότερο από την περίοδο που μαζεύονται τα σταφύλια. Είναι η στιγμή που ένας ολόκληρος χρόνος δουλειάς, φροντίδας και αναμονής κορυφώνεται. Ο αμπελουργός παρακολουθεί το αμπέλι, το έδαφος και τον καιρό και περιμένει τη σωστή στιγμή, εκείνη που το σταφύλι είναι έτοιμο να δώσει τον καλύτερό του εαυτό.

Είναι η αρχή μιας νέας σοδειάς.
Μια περίοδος αποφάσεων, έντασης, προσμονής αλλά και γιορτής.

Και για εμάς, είναι η στιγμή να γνωρίσουμε λίγο καλύτερα τους ανθρώπους και τα αμπέλια πίσω από τα κρασιά που αγαπάμε.
