In olive oil production, the most important decision isn't how you press,it's when you pick. 🫒

At our estate in the Messara Valley of Crete, September is the month we watch the groves most closely. The Koroneiki olives are approaching the window we've been working toward all year: green, phenol-rich, at peak polyphenol content.

We harvest early. Always. Not because it's easier, it isn't. Early harvest means fewer liters per tree, higher production costs, more demanding logistics. We do it because the oil that comes from green Koroneiki olives, cold-pressed within hours of picking, is categorically different from what waits.

The new harvest is approaching. More soon.
