🍇 Ο τρύγος είναι σε εξέλιξη.
Στο Οινοποιείο Silva Δασκαλάκη, η φετινή σοδειά περνά από το αμπέλι στο
οινοποιείο και ξεκινά η διαδικασία οινοποίησης.
Η αποβοστρύχωση είναι το πρώτο στάδιο: οι ράγες διαχωρίζονται από τους
βόστρυχες, πριν προχωρήσουν στα επόμενα στάδια της οινοποίησης. 🍇
Στη συνέχεια, ακολουθούν φωτογραφίες και βίντεο από τα υπόλοιπα στάδια
της διαδικασίας.

At Silva Daskalaki Winery, this year’s grapes are arriving at the
winery, where the winemaking process begins.
Destemming is the first step: the berries are separated from the stems
before moving on to the next stages of winemaking. 🍇
What follows is a series of photos and videos capturing the rest of the
winemaking process.

The only Demeter-certified winery in Crete for biodynamic farming,
following a philosophy based on natural balance and respect for the
cycles of nature.
With a long-standing connection to Liatiko, Silva Daskalaki produced the
first sun-dried PDO Dafnes wine made from Liatiko, highlighting a
distinctive traditional expression of the variety.
