Once it’s bottled, it passes through still more hands and businesses. Wine’s rich cultural history places it within some of the earliest recorded civilizations. It has survived natural disasters, the rise and fall of countless empires, wars, and global pandemics. Humans have the great privilege to be stewards of many beautiful things and wine is one such responsibility. While its role in our society has changed over time, there are so many reasons why it has and will remain.

Determining when to harvest our grapes is a precise science. In the weeks leading up to harvest we regularly measure the sugars in the grapes, known as Brix. This is done with a refractometer, pictured above. The brix level shows us ripeness and allows us to formulate the projected % of alcohol in the finished wine. In order to achieve the right balance, it’s imperative that we pick on the correct day. This is what makes harvest such a time-sensitive operation because brix levels can change quickly.
