Domaine Tawse（圖詩酒莊）是勃根地近年崛起的一顆新星，由傳奇釀酒師 Pascal Marchand 與加拿大金融家 Moray Tawse 於 2012 年買下 Gevrey-Chambertin 村著名的老牌酒莊 Domaine Maume，並以此地塊為核心更名為 Domaine Tawse。

👨Pascal Marchand 曾是名莊 Comte Armand 與 Domaine de la Vougeraie 的首席釀酒師，早在 1980 年代便開始實踐自然農法。Pascal 接手 Maume 的老藤後全面導入🍃生物動力法，強調「讓土地呼吸」。
⚠️他也跟隨勃根地傳奇 Henri Jayer 學習，繼承冷浸泡（Cold Soaking）、減少壓榨、以及（依年份調整的）100% 去梗等技術。整體酒質精緻、優雅且富花香，同時核心結構扎實，展現高陳年潛力。

🥶知識
『Les Lavières』名稱源自法語「Lave」，指當地特有的一種平坦、堅硬的石灰岩石板。古代居民常將這種石板收集起來作為屋頂瓦片。這裡的表土極薄（通常僅有 30–50 公分），下方即是結實的石灰岩母岩；葡萄根必須鑽入岩石縫隙中尋找水分。

Les Lavières is one of the estate's most representative red wines.

Domaine Tawse is a rising star in Burgundy. In 2012, legendary winemaker Pascal Marchand and Canadian financier Moray Tawse acquired the renowned, long-established Domaine Maume estate in Gevrey-Chambertin and renamed it Domaine Tawse, using the land as its core.

👨Pascal Marchand was formerly the chief winemaker for prestigious estates Comte Armand and Domaine de la Vougeraie, and began practicing natural farming methods as early as the 1980s. After taking over the old vines at Maume, Pascal fully implemented biodynamic farming methods, emphasizing "letting the land breathe."

⚠️He also learned from the legendary Burgundy master Henri Jayer, inheriting techniques such as cold soaking, reduced pressing, and (vintage-adjusted) 100% destemming. The overall quality is refined, elegant, and floral, while maintaining a solid core structure and demonstrating great aging potential.

The name 'Les Lavières' comes from the French word 'Lave,' referring to a type of flat, hard limestone slab unique to the region. Ancient inhabitants often collected these slabs to use as roof tiles. The topsoil here is extremely thin (typically only 30–50 cm), beneath which lies solid limestone parent rock; the vine roots must burrow into the crevices of the rock to find water.

Poderi Aldo Conterno is a well-regarded and much soughter-after Piedmont producer known for its wines from the best parcels of the Bussia vineyard in Monforte d'Alba. Aldo Conterno, who died in 2012, was regarded by many as the greatest of all Barolo winemakers.

The vineyard holdings total around 25 hectares (62 acres) and are mostly situated on south- and southwest-facing slopes with chalky-clay soils. Cru Barolos are made from the Romirasco, Cicala and Colonello plots within the Bussia vineyard, while the Granbussia Riserva is sourced from the oldest vines in all three plots and only made in the very best vintages.

Aldo Conterno has been labelled a Barolo modernist, and this was often stated in comparison with his brother Giovanni of the staunchly old-school Giacomo Conterno estate. Winemaking combines the modern and traditional with the Barolo wines aged at length in large Slavonian oak casks and French barriques are also used in the range.

The business was founded in 1969 when Aldo bought the Favot estate with its Bussia holdings. For the previous eight years, he had managed Giacomo Conterno with his brother, but left to make wines in a less resolutely traditionalist environment.
Aldo Conterno died in 2012 and the estate is now run by his three sons: Franco, Stefano and Giacomo.

The winery states that Jean-Marie Fourrier and the winery share a common vision in winemaking, with "nature, balance, and optimal flavor development" being key elements.

🌲The vineyards currently cover 14 hectares and have been mechanically cultivated since 1993.

🧑‍🌾 🍃Since 2002, the winery has switched to biodynamic farming methods.

The wines are made in a simple and traditional way, with the core products being Pinot Noir wines labeled Reserve, Premium, and Estate. The aging time varies depending on the wine, with the longest being 20 months in oak barrels.

敖雲主要由采用赤霞珠、品麗珠、西拉、小維多混釀而成，面對高海拔覆雜的情況，敖雲需要調整釀酒過程，在浸漬過程中增加曝氣，根據風土類型與年份單獨釀造，延長浸漬時間，采用新木桶和可讓氣體滲透的酒壇，再經過2個月的二次發酵和12個月的橡木桶陳釀。

Ao Yun 2013 is the first Chinese Fine wine that is to take on the powerhouses from the rest of the world. It is a blend of 95% Cabernet Sauvignon and a touch of Merlot which has been barrelled in 40% new oak.

This project undertaken by LVMH has been led by president of their Estates and Wines division Jean-Guillaume Prats and estate director, Maxence Duluo.

While there are any number of fine producers of Referts, Carillon is in my experience the reference standard and this wine only corroborates that conclusion. Brilliant.

2008 SOLO, CABERNET SAUVIGNON, STAGS LEAP DISTRICT
On land that has supported vines since the 1880s, our vineyard was the third property planted to Cabernet Sauvignon in what became the Stags Leap District, and fruit from this property helped establish the area's reputation in the 1970s. SOLO is produced entirely from grapes grown in this vineyard, which stretches across the rocky terraces and gentle slopes between the Silverado Trail and the Napa River. It displays all the ripe and complex fruit, supple texture, and solid structure that helped define the District as the most distinctive Cabernet-growing region in the Napa Valley.
The New Year began with storms that brought high winds and heavy rains to the valley, but precipitation soon became scarce and for the second year in a row, Napa Valley received little more than 60 percent of its normal rainfall. Warm spring days pushed vines out early, and the persistent frigid, dry air during the nights created conditions for the longest frost period in decades. The harvest was condensed.
Elegant, like a well-tailored suit, defined by good structure and balance, the 2008 exhibits aromas of plum, raspberry and black cherry with earth and herb notes in the background. It has medium body with lush but not overripe fruit on broad mid-palate and has balanced acidity and good structure typical of great Stags Leap District Cabernet Sauvignon.
