We are delighted to invite you to an extraordinary w**e dinner celebrating the iconic domaines of Pierre-Yves Colin-Morey and Caroline Morey at .wanchai on 16th November(Monday), hosted by Mathis Colin-Morey, who is working alongside his parents, in continuing the remarkable legacy of these iconic estates.

This exceptional evening offers a rare journey in Burgundian terroir and vine genetics. A central highlight of the night will be a fascinating side-by-side comparison of the Chassagne-Montrachet 1er Cru "Les Caillerets" 2023 from both domaines. Harvested from the exact same vineyard plot and crafted with identical w**emaking techniques, these two w**es differ purely in their Chardonnay genetic material—offering an unprecedented look at how vine selection shapes expression in the glass.

Domaine Jean-Pierre Guyon stands as one of the Côte de Nuits' most compelling, quality-obsessed estates, celebrated for producing w**es of astonishing silkiness, aromatic nobility, and unadulterated terroir expression. Based in Vosne-Romanée, Jean-Pierre Guyon took over the family domain in 1991 and embarked on a radical journey toward ultimate viticultural purity. The estate achieved official Ecocert organic certification in 2012 and operates under strict biodynamic principles. Guyon is famous for his labor-intensive vineyard practices, including high canopy management and meticulous hand-tending of old vines across his prized allocations.

This prestigious recognition is a testament to Olivier Lamy’s relentless pursuit of perfection, push for extreme terroir precision, and radical high-density viticulture. 🍇⭐

While every single bottle in the lineup showcased the vibrant, chiseled brilliance of the 2022 vintage, two standout w**es stole the show and were the absolute favorites among our guests:

Saint-Aubin 1er Cru Clos de la Châtenière (Monopole): A total crowd-pleaser that wowed the room with its sun-kissed warmth, opulent fruit texture, and deep, old-vine mineral backbone.

Saint-Aubin 1er Cru Derrière chez Édouard ’Haute Densité‘: The undisputed star of the night. Planted at an astounding 28,000 vines/ha, its mind-bending concentration, coiled electric energy, and endless finish left everyone completely spellbound.

Based in Saint-Aubin, this historic estate dates back to 1640, but it is the current master, Olivier Lamy, who has catapulted the domaine into global superstar status. Olivier is widely recognized as one of Burgundy’s most visionary, obsessive, and brilliant w**emakers. He revolutionized the region by experimenting with high-density plantings (reaching a staggering 30,000 vines per hectare in some plots—nearly triple the Burgundy standard) to force the vines to dig deep into the rock for water and nutrients.

In the cellar, Olivier avoids new oak to preserve pure terroir expression, using larger 300-liter and 600-liter barrels (demi-muids). The result? Whites of blinding energy, massive dry extract, and a level of mineral tension.

For this month’s feature, we are showcasing two sensational releases from the highly balanced, pristine 2022 vintage:

🦪 Saint-Aubin 1er Cru “En Remilly” 2022
“En Remilly” is arguably Saint-Aubin’s most famous Premier Cru, sitting on a steep, south-facing, stony slope just around the corner from the Grand Cru hill of Montrachet. It bursts with a spectacular nose of ripe pear, white peach, white flowers, and classic sea-breeze salinity. On the palate, it delivers glorious, sun-kissed weight balanced by an electric, stony spine of acidity and a chalky, endless finish.

🍋 Chassagne-Montrachet “Le Concis du Champs” 2022
Sourced from an exceptional village-level parcel planted with massal selection vines at an ultra-dense 14,000 vines per hectare, this w**e is built with serious depth. The 2022 “Le Concis du Champs” opens with beautifully focused notes of lemon oil, white orchard fruit, wild herbs, and a delicate touch of matchstick reduction. On the palate, it is dense, texturally commanding, and incredibly focused.

Tucked away in the legendary village of Vosne-Romanée, this ultra-boutique, family-run estate spans just over 3 hectares. Today, it is masterfully run by Gérald Cacheux, representing the fourth generation of his family to cultivate these prized terroirs. Gérald’s approach leans on meticulous, natural viticulture in the vineyards, combined with fully destemmed fruit and gentle aging in French oak in the cellars.

Because their production footprint is incredibly tiny, Cacheux remains a true ”insider‘s secret“—producing deep, texturally brilliant, and structurally complete expressions of Pinot Noir that effortlessly catch the eyes of top Burgundy critics.

🌸 Chambolle-Musigny ”Les Argillières“ 2020
”Les Argillières“ sits in an enviable position, resting directly on the northern border of the legendary Grand Cru Le Musigny. Living up to its neighbor’s reputation, this 2020 expression is pure velvet and perfume. It unfurls gracefully in the glass with intense aromas of crushed red cherries, violets, and forest floor. On the palate, it delivers that classic Chambolle laciness, backed by the remarkable concentration and deep core of fruit characteristic of the 2020 vintage.

👑 Vosne-Romanée 1er Cru ”Les Suchots“ 2020
”Les Suchots“ is arguably the most famous Premier Cru in Vosne-Romanée, flanked on all sides by Grand Crus Echezeaux and Romanée-Saint-Vivant. This bottle is a absolute powerhouse. The 2020 vintage yields a dark purple robe, opening with a complex nose of wild black berries, baking spice, exotic teas, and fresh earth. Ample, muscular, and incredibly multi-dimensional, its bold structure is seamlessly balanced by a suave, velvet texture and a majestic, long finish.

“Pierre Boisson is clearly emerging as one of Meursault’s ablest w**emakers. I will be adding some bottles to my cellar and warmly recommend readers to do the same.” — William Kelley

Following the retirement of his father, Bernard Boisson (of the legendary Domaine Boisson-Vadot), the family holdings were split between Pierre and his sister Anne. While Pierre champions his own eponymous label, his w**emaking philosophy remains fiercely traditional yet breathtakingly precise. The style certainly channels that electric, intensely mineral, dry-extract-driven profile. He is undeniably one of the ablest w**emakers of his generation.

🪵 Bourgogne Blanc “Les Belles Côtes” 2020
Pierre sources this fruit from four exceptional lieux-dits in Meursault. It bursts out of the glass with green apple, fresh citrus oil, and white flowers, underlined by a subtle, beautifully integrated nutty-toast patina. It’s satiny, precise, and punches way above its weight class.

🍋 Meursault “Les Grands Charrons” 2020
“Les Grands Charrons” is one of Meursault’s finest village vineyards, known for its deep limestone soils. The 2020 iteration is a masterclass in balance. It unfurls seamlessly with layers of crisp orchard fruit, fresh croissants, citrus zest, and pastry cream.
