😚我哋剛剛新到咗三款佢哋嘅香檳。

𝟏𝟔𝟕𝐞𝐦𝐞 Edition（基酒2011年）集合咗嚟自13個年份嘅191種酒，當中42%係珍藏酒（最老嚟自1995年）。雖然2011年天氣變化大，但釀出平衡且結構驚人嘅黑皮諾。酒體飽滿有力：黃蘋果、桃、烤麵包同核桃香。

𝟏𝟔𝟖𝐞𝐦𝐞 Edition（基酒2012年）尤其突出。以2012年呢個世紀級優秀年份做基礎💛，結合咗嚟自11個年份嘅198種酒，包括1996年珍藏酒。52%黑皮諾，感覺活力十足且集中：乾果、梨、烤堅果、蜂蜜同麵包。比167更開放濃郁，餘韻長、精準又華麗。現飲已極享受，同時有數十年陳年潛力。

𝟏𝟕𝟎𝐞𝐦𝐞 Edition（基酒2014年）帶來另一種魅力。用咗嚟自12個年份嘅195種酒（45%珍藏酒，最老1998年），呈現活潑纖細優雅風格，帶明亮果香、花香、榛子同蜂蜜牛油麵包。相比之前幾款更加親切易飲，同時保留清新同精準度。充滿活力嘅黑皮諾同富有表現力嘅Meunier，造就軟綿質感同爽脆酸度。

𝟏𝟔𝟕𝐞𝐦𝐞 Edition (base 2011) unites 191 wines from 13 years, including 42% reserves (oldest 1995). Despite dramatic weather, it delivered balanced Pinot Noir with surprising structure. Full-bodied and muscular: yellow orchard fruits, peach, toasted bread, walnuts. Incisive yet deep.

𝟏𝟔𝟖𝐞𝐦𝐞 Edition (base 2012) stands out. Built on the outstanding 2012 harvest — one of the finest this century — it blends 198 wines from 11 vintages, including 1996 reserves. With 52% Pinot Noir, it feels vibrant and concentrated: dried fruits, pear, toasted nuts, honeycomb, bread. More open and intense, it delivers length, precision, and glamour with decades ahead.

𝟏𝟕𝟎𝐞𝐦𝐞 Edition (base 2014) brings different charm. From 195 wines across 12 vintages (45% reserves, oldest 1998), it offers lively elegance with bright fruit, floral notes, hazelnut, and honeyed brioche. More approachable yet fresh and precise. Dynamic Pinot Noirs and expressive Meuniers create pillowy texture and racy acidity.

為慶祝開店週年，我哋帶來兩個汝拉最受尊崇酒莊嘅稀有佳釀😍：Anne & Jean-Francois Ganevat同Domaine des Miroirs。

Ganevat只種咗8.5公頃葡萄園，卻有17個品種，好多藤齡超過90年！佢追求極致純淨同優雅，低干預釀造，最出名就係用ouillé（補滿）方式陳年，保留新鮮度，將勃艮第嘅澄澈、集中同優美帶入汝拉。佢嘅酒喝落明亮精準，好有表現力🫶

Domaine des Miroirs由Kenjiro Kagami喺2011年喺Grusse創立，佢曾跟 Thierry Allemand、Bruno Schueller同Jean-Francois Ganevat等大師學習，風格一樣追求自然同細膩。佢打理約3公頃Chardonnay、Savagnin、Poulsard同Trousseau，用天然方式種植發酵，再長時間陳年。👏🏻佢嘅酒以純淨質感、細緻香氣、帶礦物感，同內斂有力嘅魅力見稱。

Jean-François Ganevat farms a 8.5-ha estate with 17 varieties (many 90+ years old). Renowned for purity and elegance, he crafts low-intervention wines with finesse. Best known for his masterful ouillé ageing, he brings Burgundian clarity, intensity, and grace to Jura’s native grapes — resulting in luminous, precise, and deeply expressive wines.🫶

Domaine des Miroirs, founded in 2011 by Kenjiro Kagami in Grusse, follows a similarly meticulous, natural approach shaped by his experience with Thierry Allemand, Bruno Schueller, and Ganevat. On just 3 hectares, he grows Chardonnay, Savagnin, Poulsard, and Trousseau with gentle fermentation and long elevage. The wines shine with crystalline purity, mineral drive, subtle reduction, and quiet intensity.👏🏻

The 2016 vintage was one of the stronger years of the decade👏🏻. Outstanding in Tuscany and the Southern Rhone😚, while Burgundy also produced excellent wines—though yields were much lower and quality varied by plot and vineyard. Now at ten years old, these are in a beautiful sweet spot: ripe concentration, vibrant freshness, lively acidity, and classic structure. Drinking with real energy and harmony now, while still offering great aging potential.

佢喺Ay出世，第四代葡萄農，畢業於Lycee Viticole d’Avize，之後喺Henri Giraud酒莊擔任兩年發酵室經理。2021年接手家族酒莊後，大刀闊斧進行革新🙌。

佢將全部7.5公頃葡萄園轉型為有機認證生物動力耕作，涵蓋 Ay同Chouilly嘅特級園、Mareuil-sur-Ay同Dizy 嘅一級園，以及Marne Valley多塊優質地塊。佢每公頃種植超過100棵果樹，引入農林混合系統，自家調配植物浸劑，跟隨月相耕作，完全不用化學品，令葡萄園重拾豐沛生機。

🍾Two stunning champagnes have just arrived from one of the most exciting young growers in Champagne right now - Romain Henin.🤩
⠀
Born in Ay into a fourth-generation winegrowing family, Romain Henin trained at the Lycee Viticole d’Avize and spent two years (2011–2013) as vat room manager at the prestigious Henri Giraud estate. In 2021, he took over the family domaine, and led a viticultural revolution🙌.
⠀
He converted the full 7.5 hectares to certified biodynamic farming across top terroirs — Grands Crus Ay and Chouilly, Premiers Crus Mareuil-sur-Ay and Dizy, plus Marne Valley plots. Romain planted over 100 fruit trees per hectare, introduced agroforestry, uses homemade plant infusions while following the lunar calendar, and eliminated all synthetic chemicals to bring the vines and soils back to life.

In the cellar, his radical “0-0” approach💫 (native yeasts, gravity transfers, one year on lees in barrel, zero sulfites, no fining, no filtering, zero dosage) produces vibrant, energetic, mineral-driven Champagnes full of authenticity.

🥂Join us on Friday, 𝐌𝐚𝐲 𝟐𝟗 for a wine dinner at TABLE by Sandy Keung at H Queen’s, where beautifully prepared fresh seafood and seasonal ingredients meet the distinctive champagnes of 𝐆𝐚𝐬𝐩𝐚𝐫𝐝 𝐁𝐫𝐨𝐜𝐡𝐞𝐭.

Gaspard Brochet is one of the most exciting young winemakers from Montagne de Reims 🌟. Born in 1995, he grew up among the vines, worked in graphic design, returned home in 2013, and took over the family estate in 2017–2018. Today, he stewards a small 3.2-hectare domaine across Ecueil, Sacy, and Villers-aux-Noeuds, with some parcels dating back to the 1950s and ’60s 🌱. Though his father made wine under the Vincent Brochet label and his uncle is the respected Emmanuel Brochet 🤩, Gaspard has forged a strikingly personal path, unburdened by formal oenological training.

His winemaking is driven by intuition, experimentation, and respect for each site’s individuality❤️‍🔥. He picks at full maturity, gently presses in a traditional basket press, and lets the juice flow by gravity into a mix of barrels (many new) for spontaneous fermentation. Everything is done by feel: minimal sulfur, rare malolactic fermentation, and tailored stirring. Bottling follows the lunar calendar under cork with slow hand-riddling.

Gaspard’s wines stand out for their vivid sense of place, combining the freshness and finesse of northern Montagne de Reims with impressive length, texture and personality😍

𝐓𝐡𝐞 𝟑𝟑𝟑 𝐜𝐮𝐯𝐞𝐞 is Gaspard’s signature non-vintage Champagne. The number represents three key elements: the three classic varieties (Pinot Noir, Chardonnay, Meunier), the three villages, and a blend of three vintages. Each letter (333A to 333F) denotes a different assemblage or parcel emphasis. The two 333F cuvées are pure Pinot Noir from the same villages — one Blanc de Noirs, the other Rosé de Saignée.
