Of the Midnight hour 🖤

Inspired by an art piece we saw at Art Basel last month. We were drawn to work of Lee Bae, a South Korean artist who primarily works with raw charcoal to create minimal yet beautifully refined and textural layers of art.

The textures of absolute blackness expressed in the black cocoa buttery cookie, black cocoa cream and black cocoa millefeuille, balanced with a salted mascarpone.

Using the complex and deep flavoured 普洱 tea, we made a pu’er white chocolate that really brought out its earthy flavours. We added a housemade pu’er caramel, dark chocolate and our treasured 30 years+ 陳皮 for this Panettone flavour.

A personal favourite this month is the Lemon Dalgona Coffee 🍋☕️

As huge fans of coffee desserts, we’ve always loved whipped dalgona coffee as it’s sweet, slightly bitter and so beautifully creamy. So we paired this with a citrusy lemon curd with poppy seeds for a refreshing tangy contrast.
