A kid friendly way to use leftover salmon: make salmon protein patties out of them!

Ingredients (makes 3 patties) 🐟

200 g salmon fillet (cooked/leftover), flaked
1 egg
10 tbsp panko (5 tbsp for binder + 5 tbsp for coating)
1 tsp parsley powder
1 shallot, finely diced
Salt & pepper, to taste
2 tsp mayonnaise
Neutral oil (e.g., avocado) for pan-frying

Instructions 👩🏻‍🍳

1. In a bowl, combine flaked salmon, egg, 5 tbsp panko, parsley powder, shallot, mayonnaise, salt, and pepper. Mix until evenly combined; let rest 5 minutes to absorb.
2. Divide mixture into three even portions and shape into patties.
3. Pour the remaining 5 tbsp panko onto a plate. Press each patty into the panko to coat both sides evenly.
4. Heat a thin layer of neutral oil in a skillet over medium heat.
5. Pan-fry patties 3–4 minutes per side, until golden and heated through.
6. Drain on paper towel and serve hot.

Mothersday Brunch idea 💐🍋 Smoked salmon Blini stacks.

Ingredients (4 stacks, 2 blinis each)
- 8 blinis
- 60 g cream cheese, softened
- 80 g smoked salmon, thin slices
- Fresh or dried dill, about 1 tablespoon chopped

Instructions 👩🏻‍🍳
1. Spread a thin layer of cream cheese on each blini.
2. Add smoked salmon on top of each blini.
3. Stack the second blini on top (make 4 stacks).
4. Sprinkle dill over the top and serve.
