Ever notice these small, hard, volcano-shaped lumps on your mussels? 🌋 Don’t worry: they’re just barnacles! These little hitchhikers attach themselves to the outer shell in the wild. They are completely harmless, safe, and have zero impact on the quality of the delicious seafood inside. Just give them a quick scrub before cooking!

This is how Hokkaido scallops are sorted by size. A camera reads each scallop’s size in seconds, then an air puff launches it into the corresponding size box.

Hokkaido scallops are renowned as some of the finest in the world. They’re flash-frozen immediately after being caught in northern Hokkaido. No chemicals are used: they receive only a natural water coat at the end to prevent sticking.

As always, you can get the best Hokkaido scallops at seafoodfriday.hk.
