We recently hosted an insightful staff training session with Reilly Keenan, the third generation of .

Our team took a deep dive into the history of this Spring Mountain estate, which has focused on high-altitude winemaking in Napa Valley since the 1970s. Tasting through the lineup highlighted the distinct structure, intensity, and reputation that define mountain fruit.

We tasted four wines, with two notable highlights from the portfolio:

🥂 Keenan Chardonnay Spring Mountain 2021
A mountain Chardonnay focused on crisp precision. Fermented in oak but with zero malolactic fermentation, it opens with bright green apple, citrus zest, and ripe pear. Sur-lie aging introduces a textured weight on the palate, balanced by a chalky minerality, balanced acidity, and a hint of pastry crust.

🍇 Keenan Cabernet Sauvignon Spring Mountain Reserve 2019
A refined example of mountain Cabernet. This blend (featuring 5% Cabernet Franc) is deep and expressive, with a nose of dark plum, cassis, sage, bay leaf, and to***co. On the palate, it delivers a full mouthfeel with tightly wound, velvety tannins and a distinct graphite edge. Powerful, elegant, and built for long-term aging.

We had the absolute honor of hosting Cecilia Rocca, representing the brilliant new generation of the legendary , for two exceptional back-to-back events.

From deep-dive education to exclusive tastings, we explored the rich history, unique terroir, and visionary winemaking art of Monforte d’Alba through two distinct sessions:

1️⃣ Trade Masterclass at – An exclusive gathering where we showcased a curation of 6 exceptional wines to Hong Kong’s top trade clients and professionals.
2️⃣ In-Depth Staff Training – An intimate, 5-wine training session dedicated to sharpening our team’s palates and diving deep into the soul of the estate.

Clerico Nebbiolo Capisme-E 2024

Enticingly fragrant with notes of fresh red berries, rose petals, and a hint of white pepper. “Capisme-E” (meaning “Understand me?” in Piedmontese dialect) lives up to its name—approachable yet full of character, offering crunchy red fruit, fine-grained tannins, and a crisp finish that leaves you wanting more.

Clerico Barolo Aeroplanservaj 2019

Hailing from the unique terroir of Serralunga d’Alba, the 2019 vintage is a stunning display of power and precision. It reveals a complex nose of dark red berries, crushed stones, liquorice, and floral hints. Full-bodied and beautifully structured, its firm, chalky tannins and vibrant drive promise an incredible life ahead.

Clerico Barolo Ciabot Mentin Ginestra 2021

Sourced from one of the core, historic vineyards of the Clerico family in Monforte d’Alba. The 2021 vintage is structured and complex, opening with aromas of dark red fruits, rose petals, licorice, and mineral undertones. On the palate, it is powerful yet elegant, with tight-knit tannins and a vibrant acidity that promises excellent aging potential.

The Unforgettable Pairing: Barolo & Cantonese Delicacy

A classic pairing of contrasts and complements. The rich, savory umami of the braised abalone and oyster sauce balanced beautifully with the 2020 Barolo del Comune. The wine's bright acidity cut through the richness of the dish, while its notes of dark cherry, earthy forest floor, and refined tannins mirrored the depth of the shiitake mushrooms.

🍷 Sommelier’s Lunch Honouring 30 Years of BOND



To celebrate three decades of BOND, sommeliers gathered at La Petite Maison Hong Kong for a lunch hosted by Max Kast MS, Estate Director of BOND.

Rather than focusing solely on individual vineyard sites, the discussion centred on the passage of time — how great Napa Valley wines evolve, and how site identity remains constant across vintages.

A highlight of the tasting was the opportunity to experience Vecina across two generations. The youthful Vecina 2022 showed impressive structure, dark fruit and mineral tension, while Vecina 2015 revealed the added complexity that comes with bottle age, unfolding layers of roasted coffee, savoury spice and remarkable persistence.

Alongside it, Pluribus 2022 offered a compelling contrast, expressing the concentration and energy characteristic of its steep volcanic mountain site.

Thirty years after the project was conceived, BOND continues to demonstrate that Napa Valley’s finest vineyard sites are capable not only of power and precision, but also of extraordinary longevity.

Our team recently welcomed Max Kast MS, Estate Director of BOND, for an in-depth staff training exploring one of Napa Valley’s most distinctive terroir-driven projects.

Founded by Bill Harlan and Bob Levy, BOND was created with a singular ambition: to identify and bottle vineyard sites capable of standing among the world’s great wines. Rather than focusing on a single estate, BOND brings together a collection of exceptional hillside vineyards, each expressing a unique facet of Napa Valley through Cabernet Sauvignon.

During the session, we tasted two of these remarkable sites. Vecina 2022, from Oakville’s western foothills, showed its signature combination of power and refinement, with layers of blackberry, plum, forest floor and mineral notes framed by finely textured tannins. Pluribus 2022, sourced from a steep volcanic site high on Spring Mountain, revealed a more muscular profile, offering dark berries, cedar, bay laurel and remarkable concentration while maintaining impressive freshness and precision.

What emerged most clearly was BOND’s philosophy that great wines begin with great sites. Though crafted by the same team and guided by the same vision, each vineyard expresses a distinct personality shaped by elevation, exposure and soil.

An insightful session that offered a deeper understanding of how place, rather than winemaking intervention, remains at the heart of BOND’s identity.

An evening dedicated to one of Spain's most revered wine families unfolded at Lawry's, where Jessica Julmy, Managing Director and César Román, Regional Manager of TEMPOS Vega Sicilia guided guests through a selection of wines from across the portfolio.

The selection showcased the diversity of the group's estates, from the crystalline precision of Oremus in Tokaj to the distinctive expressions of Rioja through Macán Clásico 2021 and Macán 2019, the acclaimed collaboration between Vega Sicilia and Compagnie Viticole Baron Edmond de Rothschild.

At the heart of the dinner was Lawry's legendary USDA Prime Rib, paired with Alión 2021 and Valbuena 5º 2019. Tasted side by side, the two wines revealed different facets of Ribera del Duero: Alión offering vibrant fruit, savoury depth and immediacy, while Valbuena delivered greater layering, finesse and quiet power.

Beyond the wines themselves, the evening offered a rare opportunity to explore how terroir, élevage and estate philosophy shape the character of each label within the Vega Sicilia family. Thoughtfully paired dishes provided the backdrop for conversations that moved effortlessly between viticulture, winemaking and the enduring appeal of some of Spain's most iconic wines.

Hosted by Nils Vaincot, Sales Manager of Château Quintus, the staff training highlighted the estate’s distinctive place in Saint‑Émilion and the thoughtful vision that shapes its wines. From vineyard to cellar, the session offered an insight into how Quintus translates its unique landscape into wines of clarity, structure, and depth.

The session explored the philosophy behind Château Quintus, whose name pays homage to the ancient Gallo‑Romans who founded these vineyards and customarily named their fifth child Quintus. It is also a nod to Domaine Clarence Dillon’s fifth jewel, as the estate became the fifth winery acquired by the family behind Château Haut‑Brion and Château La Mission Haut‑Brion. The château is shaped by balance: between earth and elevation, human craft and nature, tradition and modern stewardship.

A key focus of the training was Château Quintus 2012, the first vintage produced under the full management of the Quintus team following the acquisition of the estate in 2011. More than a decade on, the wine showed impressive poise, combining ripe fruit, spice and mineral freshness with finely structured tannins and a long, composed finish. Produced from 89% Merlot and 11% Cabernet Franc, it remains an important benchmark in the estate’s modern history.

Today, the estate brings together Château Tertre Daugay, purchased in 2011 and later renamed Château Quintus, Château L’Arrosée, purchased in 2013, and Château Grand‑Pontet, purchased in 2021, forming a remarkably cohesive expression of the plateau.

A fascinating session that deepened our understanding of the people, terroir and precision behind Château Quintus.

🍷A Culinary Voyage Through Spain & Hungary: An Iconic Tasting of World-Class Wines & Ibérico Ham



What happens when one of Spain’s most iconic wine estates meets one of its most treasured culinary traditions?

Guests at The GalaMuse experienced exactly that during an intimate evening hosted by Cesar Roman of TEMPOS Vega Sicilia and Albert Vall-llosada Gasa of Casa Ibérica.

More than a tasting, the evening was a journey through the many expressions of Ibérico ham and the wines that bring them to life. Guests explored how different cuts, ageing periods and textures reveal entirely different personalities, each finding harmony with a carefully selected wine.

The evening was designed as a progression of flavour and texture, moving from freshness and finesse to depth and complexity. Highlights included a rare comparison of Vega Sicilia Único 2005 and 2015 alongside Punta, the most prized and flavourful section of the Ibérico leg, before concluding with a beautifully composed pairing of Oremus Tokaji Aszú 5 Puttonyos 2017, blue cheese, honey and Maza de Bellota.

🍷 Women of the Terroir: A Bespoke Evening with Domaine de l’Arlot and Chef Vicky Lau



What made this dinner particularly compelling was not simply the quality of the wines or the cuisine, but the shared sensibility behind them.

Although Géraldine Godot and Chef Vicky Lau work in entirely different worlds, there is a striking similarity in their approach: an emphasis on precision without heaviness, elegance without excess, and a desire to let ingredients and terroir speak for themselves.

At TATE Dining Room, Chef Vicky’s “Edible Stories” provided a thoughtful counterpart to Domaine de l’Arlot’s biodynamically farmed wines. Delicate dishes built around crab, cuttlefish, mushroom and blue lobster allowed the purity and texture of the wines to shine, particularly the Clos de l’Arlot Blanc 2022 and Vosne-Romanée Les Suchots 2022.

One of the evening’s highlights was the Romanée-Saint-Vivant Grand Cru 2009 from Jeroboam — a wine of remarkable poise and complexity that lingered long after the final course.

🍷 From Épernay to the Orient: A Cross-Cuisine Showcase with Pol Roger at The Lounge, New World Millennium



Hosted by Hubert de Billy, guests journeyed through the Pol Roger portfolio at The Lounge, experiencing how different expressions of Champagne can elevate a diverse range of dishes.

The lineup moved from the floral and brioche-laced Réserve Brut NV to the expressive Rosé 2018, the generous Brut 2018, the mineral-driven Blanc de Blancs 2016, and finally the iconic Sir Winston Churchill 2015 Magnum.

Particularly striking was the way the Champagnes adapted throughout the menu. Fresh seafood amplified their purity and energy, while richer courses revealed texture, complexity and depth. The Churchill, with its signature power and structure, provided a fitting finale to the evening. Guests also enjoyed the opportunity to have bottles personally signed by Hubert de Billy, adding a special collector’s touch to an already memorable night.

Thank you to Hubert and all who joined us for this wonderful evening.
