The Association of the Disciples Escoffier was founded in 1954, in the loving memory of Auguste Escoffier - the King of Chefs and the Chef of Kings. The year 2013 witnessed the opening of the Disciples Escoffier Hong Kong delegation. Upholding the founding values of the Association, the Hong Kong delegation takes up the responsibility and the mission in the sharing and the transfer of the knowledg

e and passion of the French cuisine and techniques. Joining hands with all the Asian delegations and through our culinary events in Hong Kong, we keep the F&B industry abreast of the latest developments and stay informed of the latest needs.

🦆**A RITUAL OF FRENCH GASTRONOMY**🍷

Every dish tells a story, and none sings louder than our *Duck Press à la Rouennaise* – a 19th-century masterpiece born in Normandy's misty valleys.

Signature Duck Press is a dish steeped in history, originating from Rouen in Normandy, in the western part of France. It celebrates the Canard de Challans, a unique breed known for its deep, gamey flavour.

First, the breast is expertly roasted to achieve a crispy skin while remaining tender and pink inside. The remaining parts of the duck are then placed into a custom-made press, extracting their essence to create a rich sauce.

Finished with cognac, wine, and aromatic herbs, this dish honors every part of the bird, delivering an unforgettable culinary experience.

The French government has recognized Bernice Liu for her longstanding commitment to promoting French wine culture and culinary traditions in Hong Kong and other regions of China. As a result, Bernice has been awarded the title and the rank of Chevalier of the Merite de Agricole by the French government in acknowledgment of her contributions. In early January, the French government arranged an exclusive ceremony at the Ministry of Agriculture in Paris, during which the French Minister of Agriculture, Annie Genevard, presented her with the medal on behalf of the Prime Minister of France.

It is well known that the French wine and culinary industries are significant cultural sectors in France, both historically and in contemporary times. The Merite de Agricole is one of the notable honors bestowed by the French Government, and recipients must have dedicated at least ten years to promoting French culinary and agriculture culture to be considered for this distinction. Notable past recipients includes King Charles of the United Kingdom.

Bernice arrived in Paris in early January 2025 to receive her medal, coinciding with her birthday on January 6, making it the perfect birthday gift. Her family traveled from Canada and Beijing to Paris to celebrate with her. At the award ceremony, she was joined by her fellow graduates from the Global Executive MBA program at INSEAD. Hong Kong’s Master of Wine, Debra Meiburg, also flew in to attend and congratulate her.

Renowned Hong Kong designer Barney Cheng created a special dress for Bernice to wear at the ceremony. The dress was made in moire fabric from the famed house of Benaud (which is also used in Christian Dior haute couture) with 400hrs of hand embroidered chinoiserie themed zardozi embellishment in silver metal wire, metal raffia and metallic embroidery thread.

Since starting her winemaking journey in France in 2009, Bernice has not only established her own wine brand but also created an online platform during the pandemic.
