We were honored to host Paul Aegerter of for an intimate dinner at Flint. It’s one thing to stock these incredible wines, but it’s another entirely to hear Paul explain the unique terroir of “Pommard Les Rugiens” or the precision behind the 2019 Charmes-Chambertin Grand Cru.

A Study in Huailai(懷來) Terroir⛰️🍷

Following the recent results of the Wynn Signature Chinese Wine Awards, last night at The Ritz-Carlton, Hong Kong offered a technical look at why Canaan Winery (迦南酒業) and Domaine Franco Chinois (中法莊園) are currently defining the ”Mastery“ category in Chinese viticulture.

The evening was structured to showcase the evolution of the Huailai region:

Precision in Whites: We opened with the Chapter & Verse (詩百篇) Mastery Riesling 2020 and Sauvignon Blanc 2023. Both wines demonstrated the high-altitude acidity and mineral clarity that earned them their Gold medals.

Structural Reds: The Domaine Franco Chinois East Garden 2014 and Chapter & Verse Syrah 2022 provided a masterclass in aging potential and tannin integration—sophisticated pairings for the Grilled A4 Wagyu.

The Sweet Finale: Ending with the Petit Manseng 2016, a varietal that is quickly becoming a signature of the region’s diverse climate.

Beyond the accolades, these dinners are about the dialogue between the winemaker’s intent and the chef’s ex*****on. The inclusion of traditional Guzheng music provided the final layer to this cultural showcase.

For those looking to understand the technical rise of Chinese boutique wines, these labels represent the current benchmark.

Born from the granitic soils of the Apalta Valley, this vintage is a testament to the Marnier-Lapostolle family’s commitment to organic and biodynamic excellence. Crafted under the expert eye of Technical Director Andrea León, Prelude 2023 offers a sophisticated window into one of Chile’s most prestigious terroirs.

The Blend of Excellence:
Following the gravity-fed tradition of the estate’s Grand Vin, this assembly balances power with remarkable elegance:

50% Carménère: Providing the soul, velvet texture, and signature spice.

40% Cabernet Sauvignon: Adding structural depth and dark fruit complexity.

10% Merlot: Imparting a rounded, supple mid-palate.

Aged for 16 months in French oak, the 2023 vintage reveals vibrant notes of blackberry and wild herbs, finished with the distinct mineral tension that defines the Apalta hillside. A masterclass in pairing. 🍷✨ Spent the evening at SKYE for the Jackson Family Wine Dinner and my palate is still recovering (in the best way possible).

From the delicate Scallop Carpaccio paired with La Crema, to that rich Royal Pigeon Breast with the Sealift Vineyard Pinot Noir, every course was a hit. The finale? A 2022 Vintner’s Reserve Zinfandel with the cheese course that absolutely stole the show. 🧀🍇
