Ottaviano 2021 with Chef Leonardo Fonseca’s blue crab, smoked butter corn, crab & hazelnut sauce, and a touch of allspice oil.

🍾 The Secret to Perfect Bubbles! 🍷✨

After fermentation, sparkling w**e bottles are slowly tilted to settle the yeast near the cork. Once done by hand on wooden racks (pupitres), this process is now mostly mechanical.

Next comes disgorging – the bottle’s neck is frozen, sediment is expelled, and it’s sealed with its final cork. 🥂
