Ottaviano 2021 with Chef Leonardo Fonseca’s blue crab, smoked butter corn, crab & hazelnut sauce, and a touch of allspice oil.

🍾 The Secret to Perfect Bubbles! 🍷✨

After fermentation, sparkling wine bottles are slowly tilted to settle the yeast near the cork. Once done by hand on wooden racks (pupitres), this process is now mostly mechanical.

Next comes disgorging – the bottle’s neck is frozen, sediment is expelled, and it’s sealed with its final cork. 🥂
