Decadent Chewy Fruitcake Cookies 🍪✨

Ingredients:

1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped candied fruit
1 cup chopped nuts (pecans or walnuts)
1 cup raisins
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Directions:

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually blend into the creamed mixture.

🍫 Chocolate Fudge Truffle Cheesecake 🍫

This Chocolate Fudge Truffle Cheesecake is the ultimate dessert for chocolate lovers! With a rich and fudgy chocolate crust, a creamy chocolate cheesecake filling, and a decadent ganache topping, it’s like a chocolate truffle in every bite.

Ingredients:
For the Chocolate Crust:
1 cup graham crackers, crushed 🍪
1/3 cup granulated sugar 🍬
1/4 cup baking cocoa 🍫
1/4 cup melted butter 🧈
For the Cheesecake Filling:
12 oz bittersweet chocolate chips (Ghirardelli preferred) 🍫
24 oz cream cheese (room temperature) 🧀
1 cup granulated sugar 🍬
1/4 cup brown sugar 🍯
3 tbsp baking cocoa powder 🍫 (Ghirardelli recommended)
5 large eggs 🥚
3/4 cup heavy whipping cream 🧴
2 tsp vanilla extract 🍦
For the Ganache Topping:
6 oz semi-sweet chocolate bar 🍫
2/3 cup heavy whipping cream 🧴
2 tbsp butter (melted) 🧈
Reddi-Wip for garnish 🧁
Chocolate syrup for garnish 🍫
Directions:
1️⃣ Prepare the Crust:
Preheat your oven to 325°F (163°C).
Crush 1 sleeve of graham crackers in a plastic freezer bag with a rolling pin until finely crushed.
Melt butter in the microwave for 20-30 seconds.
In a bowl, mix graham cracker crumbs, granulated sugar, and baking cocoa. Stir in the melted butter until combined.
Press the mixture into the bottom of a 9-inch springform pan to form a crust.
2️⃣ Make the Cheesecake Filling:
Use a double boiler to melt the bittersweet chocolate chips over medium heat. Stir occasionally until smooth, then set aside to cool.
In a food processor, blend softened cream cheese until smooth. Add granulated sugar, brown sugar, and cocoa powder and pulse until well combined.
Add eggs, heavy cream, and vanilla extract. Mix until smooth.
Add the melted chocolate and blend until fully combined.
Pour the cheesecake mixture into the prepared crust.

Easy Mexican Street Corn 😋😋🔥🔥
Ingredients:
2 corn remove husks
2 tablespoons mayonnaise (or as desired)
2 tablespoons sour cream (or equal parts if you use more mayo)
2 teaspoons Tajin seasoning (or more as desired)
¼ cup cotija cheese
Lime wedges for serving
Instructions:
In a large pot add in about 6 cups of salted water. Bring to a boil and add in corn. Cover the pot, turn off the heat and allow the corn to sit in the hot water for 10 minutes.
Remove corn from the pot allow it to cool, and push a wooden skewer into the corn. In a small bowl, mix together the mayo and sour cream.
Brush the mayonnaise mix generously on the sides of the corn.
Spoon Tajin seasoning over the corn, then sprinkle cotija cheese on top. Serve with lime wedges.

For the Red Velvet Cake Layers:

2 ½ cups all-purpose flour
1 ½ cups granulated sugar
1 cup unsalted butter
1 cup buttermilk
2 large eggs
2 tablespoons cocoa powder
1 tablespoon red food coloring
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
For the Cheesecake Filling:

3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
For the Spiderweb Topping:

½ cup white chocolate chips
¼ cup heavy cream
1 tablespoon black gel food coloring
Instructions:

Prepare the Red Velvet Cake Layers:

Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Cream together butter and sugar. Mix in eggs, red food coloring, and vanilla.
Combine flour, cocoa powder, baking powder, baking soda, and salt, then add to the butter mixture alternately with buttermilk.
Divide batter between pans and bake for 25-30 minutes. Cool completely.
Prepare the Cheesecake Filling:

1 cup all-purpose flour
2 tsp baking powder
2 large eggs
1/2 cup milk
Sour cream for topping
Extra cheese for drizzle

Garlic Bread Steak Bites
Ingredients
1 lb of Sirloin Steaks
1 long loaf of French Baguette or French Bread
1 Stick of Butter
Worcestershire Sauce
Salt and Pepper
Garlic Powder
Dried Parsley
*Optional Horseradish Cream Sauce*
3/4 cup of sour cream
Fresh Horseradish To Taste
Instructions
Remove steaks from package and pat dry. Place on a plate and season very well on both sides with salt and pepper. Kosher salt and cracked black pepper is best. Then let the meat rest on the counter for at least 30 minutes.
Add 3 tablespoons of the butter to a heavy skillet. Let the butter melt and let the skillet get very hot, but not smoking.
Add the steaks to the skillet and let them cook for about 5 to 6 minutes. My steaks were about 1 inch thick. If your steaks are thicker or thinner, adjust the cook time to less or more. Flip the steaks only one time, and let the other side cook for about 5 to 6 minutes. The turn off heat and let the steaks rest in the pan for five minutes, then put on cutting board, cover loosely with foil and let rest ten minutes.
In the meantime, slice your french bread into thicker slices, a little less than 1 inch thick. Soften your butter if it is not soft and spread each slice with butter, then salt and pepper each slice and add a sprinkle of garlic powder and parsley.
I placed my bread slices in my air fryer for 5 minutes at 360 degrees. They can also be baked in the oven until crispy. Whichever way you cook your bread keep an eye on them so they don't get too well done.
Slice your steak across the grain (cut across the short side and down the whole length) Slice the steak into thin slices. I then sprinkle all the slices with a little Worcestershire sauce. *You can make the steak a day ahead of time and slice it the day you serve this appetizer. The steak can be served cold on the warm bread or you can reheat the steak in a hot skillet for a few minutes and then be sure to let it rest again before slicing.
If you choose to make the horseradish cream, combine your sour cream, horseradish to taste, salt, pepper, and garlic powder, parsley and stir until smooth.
Lay your steak slices across each slice of bread (2 slices of steak on each bread) top with the horseradish cream and another sprinkle of black pepper.
You can also garnish with sliced chives or green onions.

Ingredients:

1 cup white rice
2 cups coconut milk
1 cup milk
1/2 cup sugar
1/4 tsp salt
1/2 tsp vanilla extract
Optional: shredded coconut for garnish

Instructions:

1. Rinse rice under cold water. Combine rice, coconut milk, milk, sugar, and salt in a saucepan.

2. Bring to a boil over medium heat, then reduce heat to low. Simmer, covered, for 20-25 minutes, or until rice is tender and mixture is creamy.

3. Stir in vanilla extract.

4. Serve warm or chilled, garnished with shredded coconut if desired.

1 cup heavy cream
1/2 cup chicken or vegetable broth
1/4 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Cook the Lobster Ravioli:
Boil Water:
Bring a large pot of salted water to a boil.

Cook Ravioli:

Ingredients :

8 ounces Rib eye Steak thinly sliced.
1/2 teaspoon Kosher salt divided.
1/4 coarse ground black pepper divided.
1 tablespoon canola oil.
1 tablespoon Worcestershire sauce.
2 tablespoons butter.
1 green bell pepper sliced.
1 yellow onion sliced.
4 ounces mushrooms sliced.
1 loaf French bread cut in half lengthwise.
1/3 cup mayonnaise.
8 ounces Provolone cheese sliced.

Instructions :

1. Set oven temperature to 375 degrees.
2. Season beef with part of the salt, pepper, and oil.
3. Heat skillet intensely, then sear beef undisturbed for 2 minutes.
4. Mix in Worcestershire sauce, stir, then take out beef.
5. Introduce butter, bell peppers, onions, and mushrooms to skillet with remaining seasoning, cooking until golden for 3-4 minutes.
6. Smear mayonnaise on each bread half.
