ECLIPSE COFFEE

An espresso con panna with a sweet, spiced twist.

Built on our Black Sheep Espresso, its bold body balances the sweetness of the cream, while cinnamon and palm sugar add a warm, spiced finish.

Bold espresso. Sweet cream. A touch of spice.

Here’s how to make it.

CINNAMON SUGAR
• 40 g cinnamon stick
• 200 g palm sugar
• 200 g water
• 0.2 g Himalayan salt

Simmer on high heat for 3 mins, then medium heat for 2 mins while stirring until the sugar dissolves.
Infuse with cinnamon sticks overnight.

CINNAMON CLOUD
• 50 g whipping cream
• 0.2 g Himalayan salt
• 5 g vanilla syrup
• 10 g cinnamon sugar
• 20 g fresh milk

Froth the cream + salt until stiff. Add vanilla syrup, cinnamon sugar & milk, then froth again until thick. Chill.

ASSEMBLE
• 36 g Black Sheep Espresso
• 5 g cinnamon sugar
• 70 g Cinnamon Cloud
• 2–3 ice cubes

Add espresso + cinnamon sugar and stir. Add ice, top with Cinnamon Cloud, then finish with grated coconut and a cinnamon stick.
