Double smash patty. American cheese melted through both layers the way it should be — not sitting on top pretending to melt, actually melted. Brioche bun with sesame because it earns that bun. Golden fries on the side because the fries here are not an afterthought.

End of the week. You're done thinking.
This is the plate that does the work for you. Mie goreng — wok fired noodles, vegetables, proper seasoning, a fried egg sitting dead centre with two satay skewers crossed through it like it means business. Prawn crackers on the side. Pickled shallots in the red bowl because that acidity cuts through everything and makes the whole thing sing.
It is the dish Bali does better than anywhere else in the world. We cook it the way it deserves.
