Originating from the village of Cheddar in Somerset, England from a recipe that is thought to have been brought by the Romans from the Cantal region of France. Hence, cheddar cheese makers from outside of the U.K. often label their cheeses as a Cantal-style cheese. Through its 900-year history, the Cheddar cheese has become the world’s most loved and consumed cheese.
This firm cow’s milk cheese ranges in flavor from mild to sharp, and in color from a natural white to orange. These differences are often the result of not only the cheesemaking process but also the various regions where the cheese is produced. An English Cheddar, for example, are usually white or pale yellow in color and is aged for at least nine months in order to properly develop its sharpness. American Cheddar on the other hand, are orange in color due to the addition of a South American seed called annatto. This type of cheddar is usually mild with a creamy and salty flavor.
’s cheddar cheese, the Amaya, is processed similarly to an English type cheese while keeping in mind our locale and our customer’s preferences. It is milder than an English cheddar but sharper and more flavorful that its American counterpart. It is coated with butter that is infused with cardamon, nutmeg, pepper, cloves and cinnamon, spices that are common in many Asian kitchens. We have chosen these spices not only for its familiarity but also for the fact that they are grown in our farm. Continuing our dedication to only using ingredients that we can grow in our land.
