First day of harvest and what a fabulous day - and fabulous grapes too!

Wine doesn’t get less interesting as it ages. Neither do we.

When I started Château George 7 in my 50s, I spent a lot of time thinking about what makes a wine improve with time and I keep noticing how much of it applies to us too.

The right conditions matter. So does who’s around you. And we develop in character as we age and have the opportunity to realise our full potential.

Getting ready for our first harvest next week.

Early picking of red 🍇 for a white wine.
To be fermented in our Burgundy barrrels.

They are being rinsed and steam cleaned in preparation. While they are technically already clean because they were thoroughly steamed after their last use a few weeks ago, we need to be sure they are pristine before putting the juice in!

The myth that red wine should be served at room temperature still remains despite us knowing that room temperatures have changed dramatically over the years.

But does it really matter? What changes if we serve our red wine nearer to 16C than 25C? Yes we get a more balanced wine.

So don’t be afraid to chill 🍷

Early start picking samples of a small parcel of Merlot vines that we will be using to make a white wine this year - a white wine from red wine grapes.🍇

The lab will test their maturity so that we can estimate when this parcel will be harvested.

We think we have another 10 days to go so early September - if you would like to join us to pick for half a day, we would love to have you, just DM me - early start, fresh air, good breakfast - what’s not to like?
