Some coconut sugar starts fermenting before it ever reaches the factory, and once that happens, no amount of processing afterward can fully correct it.
It comes down to timing at the farm level. If coconut sap sits too long before it’s cooked, whether from collection delays or scattered harvest points, fermentation begins before processing even starts.
At Tropicalcoco, our farmers cook the sap almost immediately after collection, right at home, before it’s transported further. That means quality is locked in from the very first step, not something we’re correcting later in the factory.
If consistent, fresh-processed coconut sugar matters for your product, let’s talk.
