Heritage pork from , proper fat cap, cut thick, bone still attached because flavour lives near the bone and we're not in the business of throwing flavour away. The tip: Sear it hard, don't poke it every ten seconds, finish it gently and let it rest. Slice against the bone.

Our hands are in that meat grinder every morning so yours don't have to be in a supermarket freezer aisle. These aren't pucks stamped out by a machine. They're hand-pressed, good grind, good fat ratio. You can only get something this good from making it everyday.
