One of the many ways we enjoy Achill Mountain Lamb: in a flavourful and colourful mix of cous cous, dried fruit, fresh herbs and some feta cheese. This is a great way to use up leftover lamb from a roast at the weekend! Not to mention a very tasty work lunch.
