In the early days of Irish Whiskey, double distillation was a common approach. Distilling was still evolving, and this method helped shape spirits that were rich, textured, and full of natural character.
As the industry grew, many distillers began embracing triple distillation to create a lighter, smoother style. However, double distillation never lost it’s magic — it remained part of the broader story of how Irish whiskey developed over time.
Double distillation in Ireland often retains more of the spirit’s oil and flavor compounds, offering a more robust alternative to the often softer, triple-distilled counterparts. Not better, not worse—just a different expression of the same craft.
