I was delighted to contribute to , a brilliant EU-backed podcast exploring how chefs can drive real change in our food systems, from kitchens and gardens to education and policy.

I joined this conversation not just as a chef, but as someone who has spent the past decade working across food, travel, and hospitality in sparking bold ideas that connect seed to plate and policy to practice.

Much of that work comes to life at , my edible garden horticultural project, where I grow over 500 heritage varieties every year as a way to explore flavour, biodiversity, and climate resilience.
