Every bottle of The Bird gets filled like this. Minimum five years in ex-bourbon casks, non-chill filtered, nothing added for colour — and then someone stands there and fills it.

Slower? Considerably. Worth it? We think so.

The thing about a flying tumbler is that it always comes home. Might take the scenic route. Might go quiet for a while. But it lands.

We've been down a field in Carlow watching an old shed turn into something a lot more interesting. More on that very soon.

For now — The Bird, exactly where it belongs. In a hand.

Proud — and a little chuffed — to be featured in the national LEADER in Ireland booklet, and in seriously good company. 🕊️

It's a brilliant line-up of Irish businesses and community projects: Wild Ireland up in Donegal, the Scattery Island Ferry in Clare, RIP.ie over in Louth, and dozens more. Every one a story of people building something on home ground.

Our own bit is a small one: we're converting old agricultural buildings on the family farm in Nurney, Co. Carlow into a bonded warehouse for maturing Irish whiskey — farm diversification in the truest sense. We're about halfway through now, and it's starting to feel real.
