A little update from our future home - we’re not there yet, but we’re getting there 👌

Stood in the middle of Parliament Street holding a cocktail up to City Hall, and not one person looked twice. Dublin's sound like that.

The serve: The Bird, citrus, a little sweetness, and more crushed ice than is strictly sensible. Flowers optional. Encouraged.

Grattan Bridge. Named after a statesman, guarded by cast-iron seahorses, and on this particular grey afternoon, hosting a bottle of The Bird and a very respectable sour.

The Liffey has seen worse.

No robots. No conveyor belt disappearing off into the distance. Just a small line, a steady hand, and 700ml at a time.

Every bottle of The Bird gets filled like this. Minimum five years in ex-bourbon casks, non-chill filtered, nothing added for colour — and then someone stands there and fills it.

Slower? Considerably. Worth it? We think so.

Right. Where were we?

The thing about a flying tumbler is that it always comes home. Might take the scenic route. Might go quiet for a while. But it lands.

We've been down a field in Carlow watching an old shed turn into something a lot more interesting. More on that very soon.

For now — The Bird, exactly where it belongs. In a hand.

Proud — and a little chuffed — to be featured in the national LEADER in Ireland booklet, and in seriously good company. 🕊️

It's a brilliant line-up of Irish businesses and community projects: Wild Ireland up in Donegal, the Scattery Island Ferry in Clare, RIP.ie over in Louth, and dozens more. Every one a story of people building something on home ground.

Our own bit is a small one: we're converting old agricultural buildings on the family farm in Nurney, Co. Carlow into a bonded warehouse for maturing Irish whiskey — farm diversification in the truest sense. We're about halfway through now, and it's starting to feel real.

Sincere thanks to the LEADER programme and Carlow County Development Partnership for backing the vision. 📖 Full booklet + the full story: https://flyingtumbler.com/journal/2026/07/in-good-company-flying-tumbler-featured-in-the-national-leader-booklet

Put the gift cards down. The Bird is triple-distilled, non-chill-filtered and bottled at a respectable 44%. €67. A far better idea than another tie.

An unruly pot still blend — bourbon, Oloroso and ex-rye casks. Spiced and peppered. The one with opinions.
