Did you know World Baking Day is this Sunday! Why don't you try our Golden Irish Meringues?

Made with just two ingredients, this simple recipe can be prepared quickly and is perfect for a mini movie snack.

Ingredients:
75g Golden Irish egg whites
150g caster sugar

Method:
Whisk egg whites until frothy
Gradually add in the caster sugar and whisk until stiff peaks have formed
Pipe onto a lined baking tray
Bake at 100°C for 90 minutes until cooked through.

May mornings are made better with our muffins. 9.5g of protein in each one!

Recipe:
6 Golden Irish Eggs
200g cottage cheese
100ml milk
120g ham, cut into small pieces
60g cheese, grated
Salt and pepper to season

Method:
In a medium bowl, crack in your eggs, season well, then add cottage cheese and milk. Whisk until thoroughly mixed. Stir in the ham and cheese, then divide the mixture evenly into 12 greased muffin tins. Bake at 180°C for 20–25 minutes until golden and set.

Delicious warm or cold and ideal for breakfast, lunchboxes, or meal prep!

Eggs are loved in so many corners of the world! Here are some egg-citing eats from Spain, Japan and Mexico:

Spanish Tortilla:
Thinly slice 2 medium potatoes and 1 small onion
Fry the potatoes and onion in olive oil until soft. Drain any excess oil.
Beat 4 eggs with a pinch of salt, then mix with potatoes and onion.
Pour the mixture into a lightly oiled pan, and cook on low until set.
Flip carefully, cook the other side until golden.
Slice and serve warm or at room temperature.

Tamagoyaki (Rolled Omelette):
Beat 3 eggs with 1 tsp sugar, 1 tsp soy sauce and 1 tsp mirin.
Heat a lightly oiled pan, pour a thin layer of egg, cook until slightly set.
Roll the layer to one side, add more egg, and roll again. Repeat until all the egg is used.
Slice and serve warm or chilled.

Huevos Rancheros:
Fry 2 small corn tortillas lightly in oil, set aside.
Warm 120 g cooked beans (black or pinto) and spoon over tortillas.
Fry 2 eggs and place on top, add salsa and avocado. Serve immediately.

Ingredients:
300g icing sugar
35g cocoa powder
70g Golden Irish liquid egg whites

Method:
Add all of your ingredients to a bowl and mix.
It will seem like you don't have enough liquid at the start, but the sugars will absorb the liquid after a few minutes.
Divide the batter into 12 cookies.
Bake at 160°C for 17-18 minutes.
Allow to cool completely before serving.
