🥩 Slow Cooker Roast Beef Recipe

Perfect for a tender, flavour-packed Sunday dinner.

Ingredients
1.5–2kg Roast Beef (Topside, Silverside or Rib Roast)
2 onions, sliced
3 carrots, chopped
2 celery sticks, chopped
4 cloves garlic
500ml beef stock
1 tbsp Worcestershire sauce
Salt & black pepper
Fresh thyme or rosemary (optional)
Method

1️⃣ Season the Beef
Generously season the roast with salt and black pepper.

2️⃣ Brown the Beef
Heat a pan and brown the beef on all sides for 2-3 minutes. This locks in flavour and gives a richer gravy.

3️⃣ Prepare the Slow Cooker
Place onions, carrots, celery and garlic in the bottom of the slow cooker.

4️⃣ Add the Beef
Place the browned roast on top of the vegetables.

5️⃣ Add Liquid
Pour in the beef stock and Worcestershire sauce. The liquid should come about one-third up the meat, not cover it completely.

6️⃣ Cook Low & Slow

Low Setting: 8-10 hours
High Setting: 5-6 hours
For the Best Results

✅ Don't lift the lid during cooking.
✅ Let the beef rest for 15-20 minutes before slicing.
✅ Use the cooking juices to make a rich homemade gravy.
