New and exclusive! Working in collaboration with our incredible partners, Killadoon Farm and McLoughlin’s Butchers, we’re excited to introduce some exceptional new, local, slow-reared Belted Galloway beef to Fallon & Byrne’s butcher counter.

We know that McLoughlin Butchers have stood at the forefront of Irish craft butchery for over 50 years. Now, the third-generation family business is taking its commitment to provenance a step further, curating an exclusive, single-estate beef release in partnership with Celbridge’s renowned Killadoon Farm.

By introducing the hardy, heritage Belted Galloway to Killadoon’s dairy herd, this has helped cultivate an exceptional animal: raised slowly on lush Kildare pastures for 24+ months, and meticulously dry-aged and hand-cut by the McLoughlin team. The result is a product dense with natural marbling, rich minerality, and the deep, complex flavour profile that only traditional grass-rearing and artisan butchery can achieve.

Available for a very limited time only - ask our butchers for Killadoon Farm beef.

the cream at the top? now that’s the good stuff!🥛🤍

Killadoon Milk is non-homogenised, which means the natural cream is left intact, just give your bottle a little shake & enjoy the creaminess!

We are delighted to start working with Killadoon Milk and McLoughlin Butchers to source some really special beef. This is a huge part of a continued effort to find the best ingredients on the island.

Alongside their dairy herd, Killadoon farm rear a small number of Belted Galloway X cattle for beef.

They’re hardy, slow-growing and well suited to the outdoors / grass-based farming.

The result is great tasting beef with real flavour & depth. We’ll have Killadoons beef as part of our smoked beef for a limited number of weeks between now and Christmas. Ex-dairy is next on the dreamline with Killadoon.

Will follow up when it starts making its way into our sandwiches next week.
