'Feolas' brings together 'feoil', meaning meat, and 'eolas', meaning knowledge, exploring the connection between food and art through the work of Sample-Studios artists. On display on the third floor of Dunnes Stores, Patrick Street, Cork.

Free-Range, Irish-reared, Butterflied Chicken stuffed with our award-winning homemade stuffing. Perfect for sharing.

Our free-range chicken is reared on Irish family farms. The meat is plump and generous because they’re raised in a healthy, natural way, which means there’s hardly any fat, yet they still deliver an incredible flavour. Our Master Butchers have spatchcocked or butterflied a range of deliciously seasoned chickens. Spatchcocking allows for faster cooking, crispier skin, and wonderful flavour. Sustainability at home doesn’t have to be complicated. A few small habits can make a big difference.

Make the most of your freezer by saving extra portions and leftovers for another day.

Choose versatile cuts that can create more than one meal.

And don’t be afraid to ask your butcher about a lesser-known cut. Often just as delicious, with nothing going to waste.

None of it asks for a big change. Just a little more thought before the shopping bag is packed.

Such a wonderful evening launching 'Feolas' on the third floor of Dunnes Stores, Patrick Street, where it will remain on view for the rest of August.

The title brings together two Irish words: 'feoil', meaning meat, and 'eolas', meaning knowledge, an invitation to pause and think about what and how we eat.

The exhibition features work from Sample-Studios members Debbie Godsell and Claire O'Reilly, alongside photography from Koster Photography, curated by Sample-Studios in collaboration with Dunnes Stores, Dunnes Stores Patrick Street, Network Cork and Cork On A Fork Fest.

Thank you to John McKenna of McKenna's Guides for launching the exhibition, and to our fabulous MC Gráinne O'Connor.

We also enjoyed a brilliant panel discussion with Orla McAndrew, Jack O'Keeffe of Gather & Gather, Dr Matthew Whyte of Sample-Studios and our own Darran Walsh, exploring food, creativity and sustainability.

And a huge thank you to the food producers who treated our guests to samples on the night: K O'Connell's Fishmongers, Sushi Gourmet, Baxter and Greene, Sheridans Cheesemongers, Nourish and The Alternative Bread Company.

Every meal tells the story of many hands.

From farm to fork, every cut reflects the care of those who raised it, prepared it and brought it to the table. We believe food with that much care behind it deserves to be enjoyed.

That is why we are proud to partner with Too Good To Go.

In July, together, we helped save 5,948 meals from our shops, preventing an estimated 16.06 tonnes of CO₂e.

It is one small part of our commitment to respecting the food we produce, reducing waste where we can, and allowing more good food to be enjoyed.

Some heritage isn’t a building. It’s a network of people who chose to work together for the greater good.

Since 2008, we’ve been part of the Tipperary Food Producers Network, which began with a single dinner in an orchard near Cahir and has grown to bring together 36 local producers: cheesemakers, beekeepers, bakers, farmers and food producers, all sharing knowledge, standards and a commitment to quality.

At the heart of it is meitheal: people coming together with generosity, pride and a shared purpose. A tradition of neighbour helping neighbour that continues to shape our relationships with farmers, producers and the communities we serve.

This National Heritage Week, we celebrate the heritage worth protecting: not only the places that tell our story, but the people, skills and connections that keep those stories alive.

One of the things that makes Feolas so special is the way it challenges how we see food.

These stunning framed photographs are the work of Cork-based photographer Jörg Köster (), whose lens transforms cuts of meat into something extraordinary. Each image captures the beauty, texture and craft behind what we do every day, elevated to art.

It is one thing to appreciate a great cut of meat on the block. It is something else entirely to see it through the eye of a photographer who understands light, composition and the story a single piece can tell.

We are incredibly proud to have Jörg's work as part of Feolas and to see our craft reflected back to us in a way we have never quite seen before.

The Feolas exhibition is open to the public on the third floor of Dunnes Stores, Patrick Street, Cork, and will remain in place until the end of August.
