Delicious Apple & Banana Muffins with Berry & Oat Smoothie. 😍

Apple and Banana Muffins
Ingredients:
180g plain flour
200g caster sugar
1 tsp baking soda
1 tsp salt
2 medium ripe bananas
2 eggs, beaten with a whisk until pale
½ cup sour cream, whisked into the eggs
½ cup melted butter
1 tsp vanilla extract
2 apples, peeled, cored, and diced

Method:
Sieve all the dry ingredients into a bowl and set aside.
In a separate bowl, beat the eggs with a whisk until pale. Whisk in the sour cream, then add the vanilla extract and melted butter and mix well.
Mash the bananas into the wet mixture and whisk until fully combined.
Gently fold the dry ingredients into the wet mixture using a flat plastic spatula, taking care not to overmix.
Gently fold in the diced apple.
Line a muffin tray with muffin cases and divide the mixture evenly between them, filling each case almost to the top.
Preheat the oven to 170°C and bake for 20 minutes. Try to keep the oven door closed during baking, as this helps the muffins rise.
After 20 minutes, check if the muffins are cooked by inserting a small, clean knife into the center of a muffin. If the knife comes out clean, the muffins are done. If there is still raw batter on the knife, return the muffins to the oven, reduce the temperature to 150°C, and bake for a further 5 minutes.
Allow the muffins to cool on a wire rack before serving.

Berry and Oat Smoothie
Ingredients:
200g frozen mixed berries
150g natural yoghurt
2 tablespoons porridge oats
1 tablespoon honey
200ml milk

Method:
Combine all the ingredients in a blender and blend until smooth and fully combined.
Pour into glasses and serve immediately. Enjoy!

Peach, Walnut and Oat Crumble with Signature Tastes Vanilla Custard. 😍 Shop in-store

Ingredients:
600g SuperValu Signature Tastes peaches
300g Pink Lady apples
250g SuperValu caster sugar
Crumble Mix
120g SuperValu plain flour
100g SuperValu butter
70g SuperValu rolled oats
80g Demerara sugar
¼ tsp SuperValu cinnamon
60g SuperValu chopped walnuts
1 tub of SuperValu Signature Tastes vanilla custard

Method:
Preheat the oven to 180°C.
Prepare the peaches by cutting the fruit away from the stone and dicing into bite-sized pieces.
Peel the apples, cut them into quarters, remove the cores and dice.
Place the peaches and apples into a pan, sprinkle with the sugar and cook over a medium heat for about 5 minutes, until the fruit starts to soften.
Transfer the peach and apple mixture to a shallow ovenproof pie dish.
Blend the flour and butter in a food processor for a few seconds until the mixture resembles breadcrumbs. This can also be done by rubbing the butter into the flour by hand.
Stir in the oats, cinnamon, chopped walnuts and brown sugar.
Spread the crumble mixture onto a lined baking tray and bake for 15 minutes until golden. Use a spoon to mix the crumble on the tray every 5 minutes.
Sprinkle the cooked crumble mixture over the apples and peaches in the pie dish. Transfer to the oven and bake for 25 minutes, or until crisp and golden brown on top.
