La Tradizione began a few years back when Davide and Marco started meeting up a couple times a year to make true Italian-style sausages for themselves, their families and friends. What started as a hobby quickly became a Tradizione, as making these sausages provided us with a way to mark special occasions, to bring our relatives together, and to create a community amongst Italian emigrants living
in Ireland. After years of making the sausages for our own consumption, trying and testing recipes and receiving feedback and approval from the many people who had the chance to taste them (including some extremely fussy eaters, and we don’t just mean our children) we decided to start producing them to give the wider public the opportunity to try our sausages. La Tradizione was founded in 2021, in the middle of the pandemic, an event that has forced us all to reassess our values and goals in life; for us, this involved realising the passion behind making these products and bringing the Italian traditions we grew up with to a wider Irish public. Our products are unique because they follow the recipes of artisanal made Italian sausages, recipes that have evolved from those given to us by our parents, with a high meat content and a perfect ratio of lean and fat pork meat. La Tradizione combines Italian passion with 100% Irish pork, to create products that bring people together.
