To serve 2, you will need:
1 pack Ottimo Spinach & Ricotta Tortellini
75 grams unsalted butter
1 garlic clove, minced
Juice of 1 lemon
25 grams parmesan, finely grated
1 tablespoon freshly chopped parsley, plus extra to serve
Black pepper and salt

Method:
Cook the Ottimo pasta in boiling, salted water for 4 minutes until cooked.
Drain, reserving some of the pasta cooking water
Meanwhile, heat butter in a large saucepan placed over a medium-high heat until sizzling. Add the garlic, cooking for about 1 minute then add the parsley, parmesan, lemon juice, and 75 ml of the reserved pasta water. Stir well until smooth and bring it to a simmer, about 1 minute then add the cooked tortellini, stir to combine, season and serve with more parsley to sprinkle and enjoy!

Four Cheese Ravioli with quick chorizo ragu and oregano

1 pack Ottimo Four Cheese Ravioli
1 tbsp. olive oil
100g chorizo, finely chopped
1 onion, finely diced
2 garlic cloves, finely grated
1 sprig rosemary, leaves removed and finely chopped
1 tsp. dried oregano
100ml red wine
1 tin chopped tomatoes
Parmesan, to serve

1. Fry the chorizo in the olive oil until crisp then remove from the pan and set aside. Fry the onion in the leftover oil until soft and translucent then add the garlic, rosemary, oregano and chilli flakes and cook for a few minutes until fragrant. Add the red wine and chopped tomatoes and stir to combine then leave to bubble for 20 minutes until reduced.
2. Cook the Ottimo pasta in boiling, salted water for 4 minutes until cooked.
3. Drain, reserving some of the pasta cooking water then stir the pasta into the sauce.
4. Serve with parmesan.

Four Cheese Ravioli with quick, hidden veg sauce

Ingredients:

1 pack Ottimo Four Cheese Ravioli
2 tbsp. olive oil
1 tbsp. butter
1 onion, finely diced
1 carrot, finely chopped
2 sticks celery, finely chopped
1 garlic clove, crushed
1 tbsp. tomato puree
1 red pepper, deseeded and finely chopped
1 courgette, finely chopped
200ml veggie stock
Parmesan, to serve
Basil, to serve
Method:

1. Melt the oil and butter in a large saucepan and when foaming, add the onion, carrot and celery along with a pinch of salt. Cook for 5 minutes until softened then add in the garlic and cook for a minute until fragrant. Add the tomato puree and stir in then add in the red pepper, courgette and stock. Cook for 10 minutes until the vegetables are softened then blitz with a hand blender to a smooth sauce.

2. Cook the Ottimo pasta in boiling, salted water for 4 minutes until cooked.

3. Drain then place back into the pan with a few ladles of the pasta sauce.

4. Serve with grated parmesan and basil.

1 bag Ottimo Mushroom Filled Pasta
1 tbsp. butter
1 large leek, thinly sliced
1 small brown onion, finely diced
150 g spinach
1 pot basil pesto
1 jar white sauce
Black pepper and salt
50 g mozzarella, grated
50 g white cheddar, grated

๐Œ๐ž๐ญ๐ก๐จ๐:
1. Preheat the oven to 200 C / 180 C fan.

2. Cook the Ottimo pasta in boiling, salted water for 4 minutes until cooked. Drain and set aside.

3. Place the butter into a saucepan and melt over a medium heat then add the onion and leek and cook for 10 minutes until softened and translucent. Add the spinach and pesto and stir until the spinach has wilted then season with salt and pepper and remove from the heat.

4. Place a layer of the vegetable and pesto mix into a small ovenproof dish then add a layer of the cooked ravioli followed by a layer of white sauce. Finish layering like this until youโ€™ve used up all of your ingredients, finishing with a layer of white sauce. Top with the grated mozzarella and cheddar cheeses then place into the oven for 20 - 25 minutes until the lasagne is bubbling and hot throughout. Serve and enjoy!
