Packing pasta for the school lunchbox? 🍝

Ricotta and lemon are such an underrated pairing, and with asparagus and spinach in the mix, it stays fresh, light and full of flavour.

Quick, cosy, and honestly too good to miss while summer produce is still around.

Swapping out standard chicken for tender, flaky salmon is hands down the easiest pasta upgrade. The trick to keeping it light without heavy cream is using Belmorso Extra Virgin Olive Oil, garlic, and a quick splash of white wine to pull up all those rich, seared salmon bits from the pan.

Toss in the sun-dried tomatoes and tomato pulp, let it simmer down, and finish with a splash of starchy pasta water to create a silky, glossy coating.

It comes together in about 15 minutes, but tastes like you stood over the stove all evening. 🍝✨
