Today is Walnuts Day in Italy! Walnuts add a rich, nutty flavor and a thick, creamy texture to pasta sauce. Here is one of our absolute favorite ways to enjoy them: Pasta with Sun-Dried Tomato Pesto, Courgettes & Walnuts! 🍝

Quick Recipe:

● Sauté 2 diced courgettes in EVOO until soft.
● Blend 7 sun-dried tomatoes, 70g ricotta, 40g Parmigiano, 40g walnuts, 2 tbsp EVOO, salt & pepper into a smooth pesto.
● Boil 200g pasta al dente.
● Toss pasta with pesto, sautéed courgettes, fresh basil, and a splash of reserved pasta water!

Simple, creamy, and packed with flavor! 🍃
