Tomorrow, the kitchen Team from Picado is serving the starter at the Euro-Toques Ireland gala dinner in the Intercontinental in Dublin. I am beyond proud of my little but perfectly formed team of young chefs. We’ll be serving a Tamal de Masa Colada (a technique where the masa is strained and cooked before it’s formed into a tamal), we will stuff the tamal with Dexter beef in a Coloradito Mole from Tabasco. Steaming the tamal in banana leaves and serving it with a tomato caldillo, with pepitas, sesame & micro-parsley. We cannot wait for tomorrow.
