Chef Gareth Mullins One Pot Tuscan Chicken Casserole.

Golden, crispy chicken in a rich and creamy Italian-inspired sauce, the kind of dinner you’ll want to mop up every last bit of with some crusty bread 😍⁣

Save this one for your next family dinner 🍽️⁣

Ingredients⁣
4 Skinless SuperValu chicken breasts, halved lengthwise⁣
2 Eggs⁣
Coating⁣
1 tbsp Eggs⁣
1 tbsp Paprika⁣
5 tbsp Parmesan⁣
1 tbsp Mixed herbs⁣
3 tbsp Olive oil⁣

Sauce⁣
3 Shallots, finely chopped⁣
2 Cloves garlic, finely chopped⁣
1 Red pepper, diced⁣
4 sundried tomatoes, chopped⁣
1 tbsp Tomato puree⁣
250ml Cream⁣
150ml Chicken stock⁣
100g Baby spinach⁣
1 Lemon, juiced⁣
Salt and pepper, to taste⁣

Method⁣
Preheat the oven to 180°C.⁣
Coat chicken in egg, then flour mixture.⁣
Sear chicken in olive oil until golden. Set aside.⁣
Sauté shallots, garlic, and peppers.⁣
Add tomatoes, herbs, and tomato puree. Cook for 3 minutes.⁣
Add cream, stock, lemon juice, salt, and pepper. Bring to a boil.⁣
Add spinach and chicken. Bake for 20 minutes.⁣
Serve over rice, pasta, or mashed potatoes.

Do you have a food that brings you straight back to your childhood? These are mine 💛 From BA Sinéad O’Donovan

My mum has been a Home Economics teacher for 35 years, and these were the first thing she ever taught me and my friends to bake in our kitchen. A total mess, but such great fun. They take ten minutes on a Sunday, require only six ingredients, and are cheap to make.

Nutritionally, the oats do the work. Fibre and slow-release energy, so kids get from breakfast to little break without the slump. The seeds and dried fruit mean you can keep the sugar modest without losing the chew. And they’re brilliant for adults too!

The recipe (makes 12-16 squares)

250g SuperValu porridge oats
125g SuperValu butter
3 tbsp SuperValu honey
75g SuperValu soft brown sugar
50g SuperValu pumpkin or sunflower seeds
50g SuperValu raisins or chopped dried apricot
Method:

1. Heat the oven to 180°C (160°C fan) and line a 20cm square tin with baking paper.
2. Melt the butter, honey and sugar together in a saucepan over low heat, stirring until smooth. Don’t let it boil.
3. Take off the heat and stir in the oats, seeds and dried fruit until everything is coated.
4. Tip into the tin and press down firmly with the back of a spoon, so they hold together once baked.
5. Bake for 20 to 25 minutes, until golden at the edges. They’ll still feel soft in the middle and firm up as they cool.
6. Leave to cool fully in the tin before lifting out and cutting, or they’ll crumble.
7. Press the mix down really firmly, that’s the main thing that stops flapjacks from falling apart. Let them cool before cutting into squares.

She wasn’t trying to make memories. She was just trying to get through Sunday. Turns out that’s how the memories get made 💛
