Caring for Viili and Other Mesophilic Cultures

Hey everyone! If you’re into making your own Viili or other mesophilic cultures, here are some tips to keep them happy and healthy:

Optimal Temperature:
- Keep your culture at room temperature (64-72°F or 18-24°C) for best results. This is where they thrive!

Storing the Culture:
- Once fermented, pop your viili in the fridge to slow things down. It’ll keep for a week to 10 days this way. Remember it should be refermented twice a week to maintain strength!

Temperature Variations:
- If it’s cooler, your culture will take longer to ferment. Just give it some extra time.
- If it’s warmer, it might ferment too fast. Move it to a cooler spot or shorten the fermentation time. You will quickly find your rhythm.

Regular Feeding:
- Feed your culture at least twice a week. If not you will lose cultural diversity.
- To feed: Transfer 1-2 tablespoons of fermented viili to a clean jar, add 260-500g of fresh full fat Organic milk, stir, cover with a breathable cloth, and let it sit at room temp. The Viili will be fully fermented in 8 to 16hrs. Overnight is a handy time to do this. Alternatively prep in the morning and it should be done by the time you go to bed.
To test tilt the jar on a 45° angle and when the preparation comes away cleanly from the side, it is ready to refrigerate. 

Cleanliness is Key:
Always use clean utensils and jars. Sterilize them if possible.
Wash your hands well before handling the culture.

Healthy Culture Signs:
Your viili should be mild, tangy, thick, and creamy. No mold or bad smells!
If you see mold or it smells off, it’s time to start fresh.
