Pearse Irish Wh***eys are a flavourful alchemy inspired by age-old techniques, marrying the best methods from both sides of the Atlantic, and are brimming with the spirit of The Liberties Dublin. Our Irish Wh***eys are double-distilled to ensure we capture the full character of the spirit using small-batch copper pot stills that have travelled all the way from Kentucky, USA.

Our Pearse Irish Wh***ey has made its way to Indianapolis, where from .us has created his take on the classic Paper Plane cocktail.

Introducing the Pearse Paper Plane🍸

Ingredients:
- ¾ oz Pearse 5 Year Original Irish Wh***ey
- ¾ oz Faccia Brutto Aperitivo
- ¾ oz Cocchi Americano
- ¾ oz Fresh lemon juice
- ½ oz Simple syrup
- Orange peel, to garnish

Shake all ingredients with ice and strain into your favourite vintage glassware. Garnish with orange peel.

Pearse Founder’s Choice 12-Year-Old Single Malt is now entirely our own distilled wh***ey distilled, dating back to our distilling days in Carlow. is matured exclusively in barrels from another reason to raise a glass this Bourbon Heritage Month.
