Hi peeps, I hope you're all well and refreshed after a well overdue Summer of freedom :) It has been a while yes, between work, working out at the gym, trips and life in general, life is busy and good!
Today, I wanted to talk about carbs. I have been doing a lot of research into this topic recently and from my own personal experience, fostering a more "keto friendly", low carb lifestyle approach not only helps greatly with weight loss but also with long term weight maintenance ( trust me on this )
Did you know that carbohydrates actually make you feel hungry? YES, this is particularly true with the bad actors (aka refined carbs). A tip is to be mindful next time before reaching for the bread basket at the restaurant ;) There are TONNES of high protein, low fat, keto friendly recipes out there that not only help you to shed those lbs, but also help to lower your blood sugar levels to prevent chronic disease such as diabetes.
I wanted to share my own take on a keto friendly cottage pie with a mashed broccoli and cauliflower topping ( YUM ) Some benefits of these cruciferous wonders are :
Broccoli - Keeps your heart healthy while fighting off cancerous cells with its potent antioxidant properties.
Cauliflower - Fibre rich with a high vitamin and mineral content, also rich in omega 3 which is good for heart and blood health - GET IN!!!!!
I hope that you find this inspirational and I will be back soon with more guilt free, nutritional goodness - Lizzie
Recipe
360g of beef mince
200ml of beef stock ( low sodium content )
1 small onion, chopped
1 garlic clove, minced
400g chopped tomatoes
1/2 head of broccoli
1/2 head of cauliflower
Olive oil 1/2 tablespoon
Salt and pepper 1/2 teaspoon
Rosemary sprigs
Directions :
1. Fry off onion, garlic on large pan with olive oil.
2. Add the mince to the pan, season with salt, pepper and finely chopped rosemary. Cook for 8-10 mins.
3. Add in beef stock and chopped tomatoes after draining off any excess oil from pan.
4. Simmer for 10 mins before transferring to oven proof dish.
5. To make topping : Steam or boil the broccoli and cauliflower until tender then mash together and spread on top of the mince.
6. Bake in the oven at 180Β°C for 20-25 mins.
7. Serve with a green lead salad ( balsamic dressing recommended ) and enjoy X
Top tip : Using a cauli and brocc topping in place of potato not only increases your veggie and fibre intake, it also makes this dish "carb free" while retaining all the comfort.
