Crispy, golden, and packed with flavour! These Pesto Parmesan Roasted Potatoes are the ultimate side dish - made with The Galway Kitchen Fresh Basil Pesto for that fresh, vibrant and fragrant kick. Perfect for dinner parties or weeknight meals 🌿
Pesto Parmesan Roasted Potatoes
Ingredients:
* 1 kg baby potatoes (halved or quartered if large)
* 3 tbsp olive oil
* 3 tbsp The Galway Kitchen Fresh Basil Pesto
* ½ tsp sea salt
* ½ tsp black pepper
* ½ tsp garlic powder (optional)
* ½ cup grated Parmesan cheese
Method:
1. Preheat oven to 200°C
2. In a large bowl, toss the potatoes with olive oil, pesto, salt, pepper, and garlic powder until evenly coated.
3. Spread the potatoes on a lined baking tray in a single layer.
4. Roast for 30–35 minutes, flipping halfway, until golden and crispy.
5. Remove from oven and sprinkle generously with Parmesan cheese. Return to the oven for 5 minutes until the cheese melts and crisps slightly.
6. Garnish with some fresh basil pesto and serve warm
