🎉 It's nearly time for a weekend treat

Coffee slices are always my first pick at a bakery counter and here you can see how easy they are to make at home.

Ingredients

1 packet puff pastry
Hot black coffee
25g butter
150g icing sugar (plus some extra)
Seedless raspberry jam
Cream (whipped)

Method

1. Preheat oven to 180C
2. Cut some puff pastry into an even number of equal rectangles and place on a prelined baking tray. Place a lighter baking tray on top (this will stop the pastry puffing up too much) and bake for 12 mins, take off the top tray and bake for another 5 mins
3. When done allow to cool fully on the tray
4. When cold, add 25g of butter to a bowl and add in 3 tbsp of hot black coffee, stir to melt the butter (if it doesn't melt fully pop in the microwave for a few seconds), then sieve in 150g icing sugar, mix together until smooth, add more icing sugar if needed to end up with a thick but spreadable consistency.
5. Spread half the pastry rectangles with seedless raspberry jam (buy seedless or push normal jam through a sieve)
6. Add a layer of whipped cream and then top with the remaining pastry
7. Spread the coffee icing on top and allow to set slightly before eating

⚠️ Warning - these are very messy and very addictive

🌞Sunny weather food?

This dip is perfect summer recipe for those sunny days sitting outside with a glass of something cold. Serve alongside some fresh crusty bread for a definite crowd pleaser.

1. Add lots of chopped tomatoes to an ovenproof dish
2. Add in some fresh basil leaves, mozzarella, lots of good olive oil and some salt and pepper.
3. Pop into the oven at 180C (or pop the dish on the bbq) for about 20mins, until the tomatoes are all bursting and the cheese is all melted
4. Let cool slightly before dipping in some crusty bread.

This is a great little recipe, really simple when you don't want to be spending ages cooking, I topped a piece of salmon with some butter and a slice of lemon, seasoned with pepper, wrapped in tin foil and cooked on the bbq over a low heat for 10-12 mins.

Serve with some cooked baby potatoes and some salad

☀️ This is such an easy summer salad, perfect side for those BBQS.

Ingredients

1 tbsp brown sugar
Handful pecan nuts
Mixed salad leaves
Pear
Strawberries
Balsamic dressing
Feta

Method

1). Add 1 tbsp brown sugar to a hot pan, allow to start dissolving and add in a handful of pecan nuts, stir around and the sugar will continue to melt and coat the nuts, don't let it burn. After 1-2 mins transfer to a tray to cool, when cool chop up.

2). Add some mixed salad leaves to a bowl.
3). Add in some thinly sliced ripe pear, thinly sliced strawberries, the chopped pecans, mix together, drizzle with some balsamic dressing and top with some crumbled feta.

So so good, I promise.

This roasted aubergine and sweet potato salad is really good, can be served warm or cold so great way to start introducing salads.

Ingredients

Aubergine
Sweet Potato
Olive Oil
Smoked Paprika
Balsamic Vinegar
White Wine Vinegar
Garlic
Maple Syrup
Oregano
Dijon Mustard
Salt and Pepper
Baby Spinach
Chopped Walnuts
Sliced Radish
Chopped Beetroot
Feta

Method

1. Chop up some aubergine and peeled sweet potato, add to a bowl, drizzle with olive oil, sprinkle with smoked paprika and pop in the airfryer at 190C for 10-15 mins, until soft and browned

2. Meanwhile, make the dressing - Into a jug/bowl add 10 tbsp olive oil, 3 tbsp balsamic vinegar, 1 tbsp white wine vinegar, 2 cloves garlic, 1 tbsp maple syrup, 1 tsp oregano, 1 tsp Dijon mustard, salt and pepper - blitz until smooth, add more olive oil if too thick

3. When the veg are cooked add them to a large bowl, add a large handful baby spinach, a sprinkle of chopped walnuts, some sliced radish, drizzle with dressing

4. Sprinkle over some chopped beetroot and crumble over some feta cheese

💥These are so good (first attempt I put in too much cheese and some of it leaked out, second attempt, bit less and perfect)

I used .tolaqueen Goats Cheese but you could use any soft cheese you like. The goats cheese pairs beautifully with the honey and walnut, they really were delicious.

Ingredients

Filo pastry sheets
Goats cheese
2-3 tbsp honey
Chopped walnuts
Melted butter

Method

1. Take the pastry out of the fridge 15 mins before using
2. Preheat the oven to 170C
3. Melt the butter and cut the pastry sheets to the size you want. Don't leave the pastry out too long as it will dry out. Brush the pastry sheet with melted butter on each side
4. In a bowl, mix together the goats cheese, honey and chopped walnuts
5. Spoon some of the cheese onto the pastry and roll up into a cigar shape, place on a baking tray, brush with melted butter, sprinkle with chopped walnuts and bake for 20mins until golden brown.

Apple Caramel Pastries

Take the pastry out of the fridge 15 mins before using

1. Preheat the oven to 180C
2. Peel, slice and take the centre out of the apples
3. Put teaspoons of caramel (you could use honey or peanut putter either) on a lined baking tray and place the apple slice on top
4. Cover with a square of puff pastry
5. Brush with a beaten egg
6. Bake for 20mins approx, until.pastry is puffed up and golden
7. Allow to cool on the tray, flip.over and sprinkle with icing sugar

It's Pancake Tuesday tomorrow🎉

We have been using Daniels recipe in our house for a few years now, always goes down well, these need to be cooked when made not like a crepe style mixture which you can keep in the fridge.

Ingredients

265g plain flour
1 tsp baking powder
1 tbsp icing sugar
1 egg
1 pinch salt
350mls milk

Add all the ingredients to a large mixing bowl and mix until smooth.

Cook straightaway on a hot pan with some melted butter or cooking oil, when browned, turn over and cook the other side until golden brown.

*we normally double or triple this recipe

Serve with your favourite toppings

These Chicken Kievs always go down a treat in our house, I pan fried these but you could pop them into the oven or airfryer either.

You can prep these in advance and pop into the fridge until ready to cook.

Make sure you are following for lots more recipes

1. In a bowl, mix together some butter, crushed garlic and chopped parsley
2. Slice the chicken fillets lengthways and fill with the garlic butter
3. Dip into a little bit of flour to coat
4. Then dip in a beaten egg
5. Lastly into some breadcrumbs
6. Fry in a drizzle of oil or spray with oil and pop into the oven (180C) or airfryer (190C) until golden brown and cooked through
