Kelly Oysters Daily Harvesting and Sale of Fresh Native and Gigas Oysters

Michael Kelly started selling oysters from his beds at Kilcolgan, on Ireland’s west coast nearly 60 years ago, and now the business is run by his sons Diarmuid and Micheal, who continue the tradition of harvesting by hand daily to ensure absolute freshness. The succulent oysters are then packed in seaweed and sent to restaurants and superior food outlets around Ireland and Europe.

Kelly Oysters 🤝 Seaweed

At Kelly Oysters we use the most organic “bubble wrap” possible, seaweed!

All of our oysters are packed with natural seaweed from the shores of Galway Bay, helping keep our oysters secure and fresh on their journey to their final destination.

Sustainable, natural, and perfectly suited to what we do. 🦪

Oyster growth in the sunshine ☀️🦪

Always fascinating to see the range of colours in new growth on Gigas oysters. As summer arrives, that fresh shell development becomes much more visible, helped along by longer, sunnier days and warmer waters (13 degrees in the bay this week)

Regular shaking is key at this stage, encouraging strong, well-shaped shells that meet market quality standards.

Last 10 days of Native Season 🚨🦪
We’ve just harvested the final natives of the season, don’t miss your chance to enjoy them before they’re gone!

P.S. The bay is crystal clear right now (salinity ~30 ppt, water temp 10°C), giving the oysters a clean, crisp, beautifully salty taste.

"The World is their Oyster"

We were delighted to welcome 5th class pupils from Ballinderreen NS onto the farm today

They learned all about oysters, their importance to the local community, and the vital role of protecting the catchment area. It was a hands-on visit full of curiosity, learning, and plenty of fun

To top it all off, many of the pupils even tried oysters for the very first time — a big step for some and a definite highlight of the day

A fantastic visit all around

Last month of Native Oyster season 🦪🦪

April is the final month with an “R” until September, marking the end of native oyster season. During the summer months, natives rest and reproduce, an essential part of their natural cycle.

Make the most of it and enjoy some natives before the season comes to a close!
