Kelly Oysters Daily Harvesting and Sale of Fresh Native and Gigas Oysters

Michael Kelly started selling oysters from his beds at Kilcolgan, on Ireland’s west coast nearly 60 years ago, and now the business is run by his sons Diarmuid and Micheal, who continue the tradition of harvesting by hand daily to ensure absolute freshness. The succulent oysters are then packed in seaweed and sent to restaurants and superior food outlets around Ireland and Europe.

🦪 Oysters, cocktails, and climate conversations.

We'll be serving Irish-farmed Gigas oysters at the Climate Cocktail Wild Atlantic Impact event this Friday evening. Oysters are one of the most resource-efficient foods we produce, requiring no feed and very few inputs while supporting coastal livelihoods around Ireland.

They're also a reminder that environmental questions are rarely black and white. Good food, healthy seas, biodiversity, local economies and climate action all deserve a place at the same table.

Always fascinating to see the range of colours in new growth on Gigas oysters. As summer arrives, that fresh shell development becomes much more visible, helped along by longer, sunnier days and warmer waters (13 degrees in the bay this week)

Regular shaking is key at this stage, encouraging strong, well-shaped shells that meet market quality standards.
