Our Smoochie girl! ❤️

At almost a year old now, Smooch has well and truly settled into her farm life duties here at Highbank.

She is the leader on morning walks around the orchard with Rod and Julie and can't wait until it is time for another harvest season in the orchards

Cha-Ching! 💰 Financier cakes are in the building

Did you know? Financier cakes are named after a clever 19th-century Parisian pastry chef, Monsieur Lasne, who designed the rectangular mould so that the small almond cakes resembled gold bars

The financier cakes are light and fluffy and have a beautiful depth of flavour, thanks to the Highbank organic Orchard Treacle

Our Dark Doyle Apple Rum has an extraordinarily, rich, deep flavour that pairs beautifully with the Crozier Blue, making them an unexpected but much-loved pairing

Crafted seasonally, in small batches, from 100% Irish ewe’s milk in Fethard, Co. Tipperary. The Crozier Blue is gently creamy cheese when young (June to September) before it develops into a velvety, fudgy and smooth cheese as the season develops from October through to March.

Like Highbank, you can also visit the Cashel Blue farm for a tasting session and to learn more about the process of cheesemaking.

It's the Bank Holiday weekend!

Your guests will be clearing their plates when you serve this juicy lean pork tenderloin, fresh off the BBQ

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
500g pork tenderloin
𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
330ml Highbank Apple Cider (choose from Proper or Medieval Cider)
1 bay leaf , dried (or 2 fresh)
2 tbsp honey
2 tbsp brown sugar
2 garlic cloves , minced
1/2 tsp salt
Black Pepper

𝐌𝐞𝐭𝐡𝐨𝐝
-Mix the marinade ingredients in a bowl.
-Place marinade and pork in a large ziplock bag and marinate in the fridge overnight, up to 24 hours.

Fat Tomato is Anthony O’Toole’s edible garden and food project in North Wexford – where the seasons are celebrated through old and new Irish flavours.

Anthony’s edible garden journey began in 2016 in a polytunnel on our farm here in Highbank, Co. Kilkenny. He still remembers his first harvest: tomatoes bursting with flavour, peas sweet, beans tender, cucumbers crisp, chillies fruity, corn sweet, tomatillos tangy, and squash rich and nutty.

Everything grew from there and he now has an Honesty Farm in Camolin, Co. Wexford. His edible garden and kitchen pantry are brimming with things to grow, cook, preserve, and share — shaped by the seasons and years of patience and dedication.

Anthony uses a number of Highbank goodies to create beautiful artisan products including the Damson Umami Sauce. This deep, velvety, umami-rich sauce is inspired by the centuries-old Chinese tradition of hoisin.
