✨ Episode 05: Pairing 02 ✨

For her second pairing, of she chose the most stunning cheese toastie, which consisted black pudding made with and puddings, Ardsallagh Goats Cheese and Blackcurrant Jam, made by Seaneen and made with blackcurrants from her garden.
This was paired with their Irish Kir Royale - Berrissimo and - as an alternative and bonus pairing to this toastie, we also tasted whiskey, a limited edition that had been made for L. Mulligan Grocer.

As stand alone items, this dish is sublime and as comforting as gastropub food can possibly get! But when paired with Seáneen’s selected beverages, not only do they compliment each other so well but you experience a beautiful representation of Irish food & drinks enjoyed side by side.

In this series, we're going to champion some of our favourite local superstar shops! It is vital, now more so than ever, that we support our local shops!

Whether it's a breakfast roll or the pension you're after, this is the spot! Siobhan and the gang here run an incredible show.
It has an impressive deli and hot food counter (free cup of tea or coffee with any sandwich or roll 👌), delicious home baking, Post Office, coffee machine, ice-cream machine, toys, stationary, gumshields and loads more!

They have also been a great advocate for local suppliers, which is proudly stated on the shop window! 💪

Simple Savoury Sausage-ness 🌭: De Roiste Sausage Rolls 🎉

Indulge your taste buds with our simple Sausage Rolls made with the finest 'De Roiste' Sausage Meat! 🍴✨

Perfect for this cold weather ❄️

👩‍🍳 Recipe Time: 10 mins prep, 25-30 mins cooking time.

Ingredients:

1 sheet of puff pastry,
De Roiste Sausage Meat or De Roiste 'Seanie's' Sausages (Skins removed),
1 Egg.
Sesame seeds (optional)

Instructions:

Preheat your oven to 180°C.
Roll out the puff pastry and spread the 'De Roiste' Sausage Meat lengthways on the puff pastry.
Fold over the puff pastry and press the edges with a fork so the pastry seals together.
With a sharp knife, cut the sausage roll to your preferred size.
Score with a knife and place on a baking sheet, brush with an egg wash for that golden perfection and sprinkle some sesame seeds on top.
Bake until golden brown and cooked through!

Pro Tip: Serve with relish for an extra flavor explosion!
